A vibrant and flavorful grilled halloumi salad featuring chewy, charred halloumi cheese, crisp homemade croutons, fresh cucumbers, cherry tomatoes, and red onions, all tossed in a tangy Greek dressing and garnished with fresh basil. Perfect as a light summer main course or a refreshing side dish.

Ingredients

Cheese and Salad

  • 6 to 8 ounces halloumi cheese
  • Extra-virgin olive oil, for grilling and dressing
  • 2 Persian cucumbers, thinly sliced
  • 3 cups cherry tomatoes, halved
  • Scant ¼ cup thinly sliced red onion

Croutons

  • 2 large slices of bread, for homemade croutons (grilled option)

Greek Salad Dressing and Garnish

  • ⅓ cup fresh basil leaves
  • Flaky sea salt, optional, for seasoning

Instructions

  1. Preheat the grill: Preheat a grill or grill pan to high heat to ensure a perfect char on the halloumi cheese.
  2. Prepare and grill the halloumi: Slice the halloumi into ½-inch-thick planks. Rub both sides with extra-virgin olive oil to prevent sticking and to enhance browning. Place the slices on the hot grill, then reduce the heat to medium. Grill each side for 2 to 3 minutes until the halloumi is well-charred and has a crispy exterior.
  3. Slice the grilled halloumi: Remove the halloumi from the grill and cut the planks into bite-sized cubes suitable for the salad.
  4. Prepare the croutons: Grill or toast the 2 large bread slices until crispy. Cut into bite-sized croutons to add a hearty texture to the salad.
  5. Assemble the salad: In a large bowl or platter, combine the thinly sliced Persian cucumbers, halved cherry tomatoes, sliced red onions, grilled halloumi cubes, and homemade croutons.
  6. Add the dressing and garnish: Drizzle the salad with the prepared Greek salad dressing. Top with fresh basil leaves for an aromatic finish.
  7. Season to taste: Sprinkle flaky sea salt if desired to enhance the flavors of the fresh ingredients and grilled cheese. Serve immediately for best freshness.

Notes

  • For best texture, eat the salad on the day it is made.
  • You can prepare the Greek salad dressing a few days in advance and store it in the refrigerator.
  • If you do not have a grill, a grill pan or cast-iron skillet works well for grilling the halloumi.
  • Use sturdy bread like sourdough or whole wheat for croutons to ensure they hold up well when grilled.
  • Adjust the amount of halloumi according to your preference for cheese in the salad.
