Ingredients

Vegetables

  • 1 pound green beans, stems removed
  • 2 green onions, thinly sliced (green and white parts separated)
  • 2 cloves garlic, minced
  • 1/2 teaspoon grated fresh ginger

Liquids and Sauces

  • 1 tablespoon vegetable oil
  • 1 teaspoon chili garlic sauce
  • 1 tablespoon soy sauce
  • 1/2 tablespoon honey

Others

  • 2 quarts water (for blanching)
  • Ice and cold water (for water bath)

Instructions

  1. Boil Water: Bring 2 quarts of water to a boil in a medium saucepan with deep sides to prepare for blanching the green beans.
  2. Prepare Ice Bath: Fill a large bowl with ice and cold water to create a water bath; set it aside for shocking the green beans.
  3. Blanch Green Beans: Once the water is boiling, add the green beans and stir for 2 minutes until they turn bright green and are crisp-tender.
  4. Shock Green Beans: Quickly drain the green beans and transfer them immediately into the ice water bath to stop the cooking process and preserve their vibrant color.
  5. Heat Oil: Return the saucepan to the stove, wipe out any excess water, and heat 1 tablespoon of vegetable oil over medium heat.
  6. Sauté Aromatics: Add the white parts of the green onions, minced garlic, chili garlic sauce, and grated fresh ginger to the hot oil. Cook while stirring constantly until fragrant, about 1 minute.
  7. Add Sauce: Stir in the soy sauce and honey, mixing constantly until the sauce is well combined and slightly thickened.
  8. Toss Green Beans: Add the blanched green beans to the pan and toss them in the sauce until warmed through and evenly coated.
  9. Garnish and Serve: Remove from heat and serve immediately, garnished with the green parts of the scallions for a fresh finish.

Notes

  • Blanching the green beans before stir-frying helps maintain their bright color and crisp texture.
  • The chili garlic sauce adds a gentle heat; adjust the amount based on your spice preference.
  • For a vegan version, substitute honey with maple syrup or agave nectar.
  • This dish is best served immediately to enjoy the freshness and crunch of the green beans.
