These Greek Chicken Kabobs are juicy, flavorful marinated chicken pieces grilled to perfection and garnished with feta cheese and fresh parsley. Served with traditional tzatziki sauce, they make a perfect Mediterranean-inspired meal that's quick to prepare and deliciously satisfying.

Ingredients

Chicken and Marinade

  • 2 lbs boneless skinless chicken breasts
  • 1/2 cup plain Greek yogurt
  • 4 cloves garlic, minced
  • 1/4 cup olive oil
  • 1 teaspoon lemon zest
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons red wine vinegar
  • 1 1/2 teaspoons dried oregano
  • 1/2 teaspoon paprika
  • 1 1/2 teaspoons kosher salt
  • 1/2 teaspoon black pepper

For Garnish and Serving

  • Crumbled feta cheese, for garnish
  • Chopped fresh parsley, for garnish
  • Tzatziki sauce, for serving

Instructions

  1. Prepare Chicken: Cut the chicken breasts into 1-inch pieces and place them in a large Ziploc bag, bowl, or shallow baking dish. Set aside for marinating.
  2. Make Marinade: In a medium bowl, whisk together Greek yogurt, minced garlic, olive oil, lemon zest, fresh lemon juice, red wine vinegar, dried oregano, paprika, kosher salt, and black pepper until smooth.
  3. Marinate Chicken: Pour the marinade over the chicken pieces and stir or seal the bag tightly, ensuring all chicken is evenly coated. Refrigerate and marinate for at least 30 minutes and up to 4 hours for best flavor.
  4. Prepare Skewers: If using wooden skewers, soak them in water for 20 minutes to prevent burning during grilling.
  5. Thread Chicken on Skewers: Remove chicken from the marinade, discarding any remaining marinade, and thread about 4 ounces of chicken per skewer evenly.
  6. Preheat Grill: Heat the grill or grill pan to medium-high heat and brush lightly with olive oil to prevent sticking.
  7. Grill Kabobs: Grill the chicken skewers for about 10 minutes total, turning every couple of minutes to cook evenly until the chicken is fully cooked through and juices run clear.
  8. Garnish and Serve: Remove kabobs from grill and place on serving platter. Garnish with crumbled feta cheese and chopped fresh parsley. Serve warm with tzatziki sauce alongside optional sides such as hummus, pita bread, and a simple Greek salad.

Notes

  • Marinate the chicken for up to 4 hours for more intense flavor; avoid marinating longer to prevent the yogurt from breaking down the meat excessively.
  • Soaking wooden skewers prevents them from burning or catching fire on the grill.
  • You can substitute chicken thighs if preferred for a juicier kabob.
  • Serve with complementary sides like hummus, pita, and Greek salad to create a full meal.
  • Ensure chicken is cooked to an internal temperature of 165°F (75°C) for food safety.
