Ingredients

Chicken

  • 1 lb chicken breasts, cut into cubes
  • 2 tbsp butter
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • 1-2 tbsp minced garlic
  • Buffalo Wild Wings Garlic Parmesan Sauce, enough to coat chicken

Potatoes

  • 4 - 5 small/medium russet potatoes, peeled and cut into small cubes
  • Olive oil, for tossing
  • Salt, to taste
  • Pepper, to taste
  • Garlic powder, to taste
  • Paprika, to taste

Topping

  • 1 cup shredded mozzarella cheese
  • Dried parsley, for garnish (optional)
  • Additional Garlic Parmesan Sauce, for serving (optional)

Instructions

  1. Prepare Potatoes: Wash, peel, and cut the russet potatoes into small cubes to ensure even cooking and crispiness.
  2. Season Potatoes: Toss the potato cubes thoroughly with olive oil, salt, pepper, garlic powder, and paprika. Make sure they are well coated with oil and seasoning for maximum flavor.
  3. Air Fry Potatoes: Place the potatoes in the air fryer and cook at 400°F (204°C) for about 25 minutes, shaking the basket a few times during cooking to promote even crispiness.
  4. Prepare Chicken: While the potatoes cook, cut the chicken breasts into cubes to speed up cooking time and allow better seasoning penetration.
  5. Cook Chicken: Heat 2 tablespoons of butter in a skillet over medium-high heat. Add the chicken cubes and cook until browned and cooked through.
  6. Season Chicken: Sprinkle the chicken with salt, pepper, paprika, onion powder, and Italian seasoning to infuse the meat with savory aromatic flavors.
  7. Add Garlic and Sauce: Once the chicken is cooked, add minced garlic and enough Buffalo Wild Wings Garlic Parmesan Sauce to coat the chicken pieces evenly. Stir to combine.
  8. Combine Potatoes and Chicken: Add the crispy air-fried potatoes to the skillet with the chicken and stir well to mix all ingredients.
  9. Add Cheese: Sprinkle shredded mozzarella cheese over the chicken and potato mixture evenly.
  10. Melt Cheese: Place the skillet under the oven broiler for just a few minutes until the cheese melts and bubbles. Alternatively, cover with a lid and warm on the stovetop until melted.
  11. Garnish and Serve: Garnish the dish with dried parsley and additional Garlic Parmesan Sauce if desired. Serve hot and enjoy!

Notes

  • You can adjust the seasoning quantities on the potatoes according to your taste for salt and spice.
  • If you don’t have an air fryer, roasting the potatoes in a 425°F oven for about 30-35 minutes will work as an alternative.
  • Use fresh minced garlic for the best flavor, but garlic powder can be substituted if necessary.
  • Broiling the cheese gives a nice golden-brown topping but watch carefully to prevent burning.
  • Buffalo Wild Wings Garlic Parmesan Sauce can be substituted with any good quality garlic parmesan sauce or homemade version.
