This recipe yields tender meat with a delicious herb-infused aroma and crispy skin that's sure to become a family favorite.

Ingredients

Chicken:

  • 4 chicken thighs (with bone & skin)

Seasoning & Herbs:

  • 4-5 garlic cloves, peeled and slightly pressed
  • 1/2 teaspoon sage (dried or fresh, chopped)
  • 3/4 teaspoon rosemary (dried or fresh, chopped)
  • 1/4 teaspoon garlic powder
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to ensure it's at the perfect temperature to start roasting the chicken.
  2. Season Chicken: Sprinkle salt and black pepper evenly on both sides of each chicken thigh. Place the thighs skin-side up in a baking pan. Then, sprinkle garlic powder and the chopped sage and rosemary evenly over the top of the thighs. Arrange the pressed garlic cloves around the chicken in the pan for added flavor.
  3. Roast at High Temperature: Place the baking pan in the center rack of the preheated oven and roast uncovered for 45 minutes. This step helps to crisp the skin and release the herb flavors.
  4. Reduce Heat and Continue Cooking: Lower the oven temperature to 325°F (163°C) and cook the chicken for an additional 10 minutes. This allows the chicken to cook through evenly without drying out.
  5. Check Doneness: Ensure the internal temperature of the chicken thighs has reached 165°F (74°C) using a meat thermometer, indicating they are safely cooked. The skin should be golden brown and crispy.
  6. Keep Warm and Serve: To keep the chicken warm before serving, turn off the oven and cover the pan tightly with foil until ready to eat.

Notes

  • Use a meat thermometer to ensure perfect doneness and food safety.
  • Fresh herbs can be substituted for dried herbs for a more vibrant flavor.
  • Pressing the garlic cloves releases more aroma and flavor during roasting.
  • Cover with foil after cooking to keep chicken moist and warm before serving.
  • Leftover chicken can be refrigerated and enjoyed cold or reheated gently.
