This Garlic Butter Steak Bites and Potatoes recipe is a quick and flavorful one-pan meal featuring tender sirloin steak cubes seared to perfection with garlicky, herb-seasoned potatoes. Cooked in a cast iron skillet with butter and olive oil, this dish offers a deliciously rich and savory combination perfect for a satisfying dinner in just 20 minutes.

Ingredients

Steak and Potatoes

  • 1 tbsp olive oil
  • 4 tbsp unsalted butter (divided, ½ stick)
  • 1 lb Yukon Gold potatoes, diced into ½-inch cubes (or red-skinned or fingerling potatoes)
  • 4 cloves garlic, minced
  • 1 tsp dried rosemary
  • 1 tsp dried oregano
  • ½ tsp kosher salt
  • ½ tsp ground black pepper
  • 1½ lbs sirloin steak, cut into 1-inch cubes (or beef tenderloin, NY strip steak, or stir fry meat)

Garnish

  • Freshly chopped parsley (optional)

Instructions

  1. Heat Skillet and Melt Butter: Heat a cast iron skillet over medium-high heat. Add olive oil and 2 tablespoons of butter, allowing the butter to melt completely and coat the skillet.
  2. Season Potatoes and Add to Skillet: Combine diced potatoes, minced garlic, dried rosemary, dried oregano, kosher salt, and ground pepper. Add this mixture to the skillet and cook undisturbed for approximately 4 minutes to develop a golden crust.
  3. Cook Potatoes Until Tender: Stir the potatoes and cook an additional 3 to 4 minutes, or until they are fork-tender. Once cooked, remove the potatoes from the skillet and set aside in a bowl to rest.
  4. Increase Heat for Steak: Return the now-empty skillet to the stove and turn the heat up to high. Add the remaining 2 tablespoons of butter and stir to melt and coat the skillet.
  5. Cook Steak Bites: Add the cubed steak in a single layer to the hot skillet. Cook for 1 minute undisturbed to sear the underside. Flip or stir and cook for another 1-2 minutes depending on your preferred doneness. Remove the skillet from the heat once the steak is cooked.
  6. Toss Potatoes and Steak Together: Add the cooked potatoes back into the skillet and gently toss everything together to combine and warm through. Adjust seasoning with extra salt and pepper if desired.
  7. Garnish and Serve: Sprinkle freshly chopped parsley over the dish if using, then serve immediately and enjoy your flavorful garlic butter steak bites and potatoes.

Notes

  • For best results, use a cast iron skillet to achieve a perfect sear on both potatoes and steak.
  • You can substitute sirloin steak with tender cut beef like tenderloin or NY strip.
  • Red-skinned or fingerling potatoes can be used instead of Yukon Gold for different textures.
  • Be careful not to overcrowd the steak bites in the pan to ensure proper browning.
  • Adjust herbs and seasoning to your taste preference.
  • Optional garnish of parsley adds a fresh, vibrant touch.
