This From-Scratch Lemon Blueberry Icebox Cake is a refreshing, no-bake dessert featuring layers of buttery shortbread cookies, tangy homemade lemon curd, whipped cream, and fresh blueberries. It’s a perfect make-ahead treat that chills overnight to soften the cookies and meld the flavors into a luscious, creamy cake.

Ingredients

Lemon Curd

  • 6 large eggs
  • 1½ cups granulated sugar
  • 1 cup freshly squeezed lemon juice (about 5–6 lemons)
  • Zest of 2-3 lemons (about 2 tablespoons)
  • 12 tablespoons (1½ sticks) butter, cut into pieces

Whipped Cream Mixture

  • 3 cups heavy cream, cold
  • 6 tablespoons powdered sugar (or to taste)
  • 1½ teaspoons vanilla extract
  • Homemade lemon curd (prepared above)

Assembly

  • About 20 ounces buttery shortbread cookies (store-bought or homemade; about 2½ packages of Pepperidge Farms)
  • 3 cups fresh blueberries

Sugared Blueberries (Optional Garnish)

  • 1 cup fresh blueberries
  • ¼ cup granulated sugar
  • ¼ cup water
  • Additional granulated sugar for rolling

Instructions

  1. Make the lemon curd: In a medium saucepan, whisk together the eggs, granulated sugar, lemon juice, and lemon zest. Cook over medium-low heat, stirring constantly until the mixture thickens and coats the back of a spoon, about 10–12 minutes. Avoid boiling. Remove from heat and stir in butter pieces until fully melted and incorporated. Strain the curd through a fine mesh sieve into a bowl to remove any lumps. Let cool completely, then refrigerate until ready to use.
  2. Make the whipped cream: In a large mixing bowl, beat the cold heavy cream, powdered sugar, and vanilla extract until soft peaks form. Gently fold in the cooled lemon curd to taste—you can use the full batch for a strong lemon flavor or start with ¾ and add more as desired.
  3. Assemble the cake: Spread a thin layer of the lemon cream mixture on the bottom of a 9×13-inch dish. Add a single layer of shortbread cookies, breaking them as needed to fit. Top with a layer of lemon cream, then scatter a generous handful of blueberries. Repeat these layers—cookies, cream, and blueberries—until you've used all the cream, finishing with a smooth layer of cream on top. Expect 2 to 3 layers based on your dish depth.
  4. Chill the cake: Cover and refrigerate for at least 6 hours, preferably overnight, until the cookies soften and the cake sets.
  5. Make the sugared blueberries (optional garnish): In a small saucepan, combine ¼ cup granulated sugar and ¼ cup water. Heat just until sugar dissolves, then remove from heat. Toss blueberries in the syrup and transfer them to a wire rack or parchment-lined tray to dry slightly for about 15 minutes. Roll the sticky berries in granulated sugar to coat, then let dry completely.
  6. Garnish and serve: Just before serving, top the cake with fresh or sugared blueberries. Slice and serve chilled for a refreshing and elegant dessert.

Notes

  • The cake requires at least 6 hours chilling but benefits from overnight refrigeration to fully soften the cookies and meld flavors.
  • You can adjust the lemon curd amount in the whipped cream depending on your preferred lemon intensity.
  • Using buttery shortbread cookies adds richness, but any sturdy cookie that softens well can be substituted.
  • Sugared blueberries are optional but add a pretty, sweet crunch and visual appeal on top.
  • Make sure the heavy cream is cold for best whipping results.
  • Straining the lemon curd ensures a silky smooth texture free of cooked egg bits.
