Ingredients

Chicken

  • 4 bone-in (skin-on) chicken thighs
  • Salt and pepper

Onion and Aromatics

  • 1 large Vidalia or yellow onion, thinly sliced
  • 2 cloves garlic, finely minced
  • Fresh thyme sprigs

Broth and Pasta

  • ½ pound orzo pasta
  • ⅓ cup chicken broth
  • 3 – 3 ½ cups beef broth (or substitute chicken or vegetable broth)

Toppings and Garnish

  • ½ cup grated Gruyere cheese
  • Fresh chopped parsley (optional garnish)

Instructions

  1. Prep the Chicken: Pat chicken thighs dry and season generously with salt. Avoid pepper on the skin side to prevent burning; add it later if desired.
  2. Sear the Chicken: Place chicken thighs, skin side down, in a cold large skillet. Turn heat to medium-low and let fat render as the skin crisps and turns golden brown, about 15–20 minutes.
  3. Flip the Chicken: Raise heat to medium-high and sear the other side for 2–3 minutes. Remove chicken and set aside.
  4. Caramelize the Onions: Add sliced onions to skillet with rendered chicken fat. Cook over medium heat, stirring occasionally, until soft, golden, and caramelized, about 15–20 minutes.
  5. Add Garlic: Stir in minced garlic and cook for 1 minute until fragrant.
  6. Toast the Orzo: Add orzo to skillet and toast for 2–3 minutes, stirring frequently to prevent burning.
  7. Deglaze the Pan: Pour in chicken broth and use a wooden spoon to scrape up browned bits from the bottom for extra flavor.
  8. Add Broth and Chicken: Stir in 3 cups beef broth and fresh thyme sprigs. Return chicken thighs and any juices to skillet, nestling them into the orzo mixture.
  9. Simmer: Reduce heat to medium and cook for 10–12 minutes, stirring occasionally, until orzo is tender and chicken reaches internal temperature of 165°F (74°C). Add more broth as needed to prevent sticking.
  10. Broil with Gruyere: Sprinkle grated Gruyere over chicken and orzo. Place skillet under broiler for 1–2 minutes until cheese melts and turns golden brown.
  11. Finish and Serve: Remove skillet from oven, garnish with chopped parsley if desired, and serve immediately.

Notes

  • Use bone-in, skin-on chicken thighs for best flavor and texture.
  • Be patient caramelizing onions to develop deep, sweet flavor essential to the dish.
  • Adjust broth amounts as needed to keep orzo from drying out during cooking.
  • Use caution when broiling; watch closely to avoid burning the cheese.
  • Fresh thyme can be substituted with dried thyme if unavailable; use about 1 teaspoon dried.
