This Flourless Chocolate Cake is a rich, decadent dessert made without flour, perfect for gluten-free diets. Featuring a smooth and fudgy texture, it combines melted semisweet chocolate and butter with whipped egg whites and coconut sugar for a light yet indulgent cake. Finished with a dusting of cacao powder, this cake is ideal for chocolate lovers looking for a naturally gluten-free treat.

Ingredients

Chocolate Mixture

  • 8 ounces semisweet chocolate chips
  • 6 tablespoons butter (or coconut oil)
  • ½ tsp espresso powder

Egg Mixture

  • 6 large eggs (separated, whites and yolks, at room temperature)
  • ½ cup coconut sugar

For Serving

  • Optional cacao powder, for dusting

Instructions

  1. Prep pan: Preheat your oven to 300°F (150°C). Butter the bottom and sides of a 9-inch springform pan. Optionally, line the bottom with parchment paper on top of the butter to ensure easy removal of the cake.
  2. Melt chocolate: Place the chocolate chips and butter in a large glass bowl and melt them over a double-boiler, stirring frequently until fully melted and smooth. Alternatively, melt slowly in the microwave in 20-second increments, stirring between each. Remove from heat and let cool to room temperature.
  3. Whip egg whites: While the chocolate cools, add the egg whites to a large mixing bowl. Beat them on medium-high speed until soft peaks form. Gradually add the coconut sugar, about one tablespoon at a time, while continuing to beat until the sugar is fully incorporated and stiff peaks form. Set aside.
  4. Mix egg yolks and chocolate: Once the chocolate mixture has cooled completely to room temperature, add the egg yolks and espresso powder. Stir gently to combine, ensuring the chocolate is cool enough to prevent the eggs from scrambling.
  5. Fold egg whites into chocolate: Add one-third of the whipped egg whites to the chocolate mixture and stir carefully to lighten it. Then gently fold in the remaining egg whites in two additions, being careful not to deflate the mixture, to maintain a light texture.
  6. Bake the cake: Pour the batter into the prepared springform pan. Bake in the preheated oven for 45 minutes. The cake will rise during baking but will deflate once cooled.
  7. Cool and serve: Allow the cake to cool completely in the pan. Carefully remove the sides of the springform pan and dust the top of the cake with cacao powder before serving.

Notes

  • Ensure that the chocolate mixture is cooled completely before adding egg yolks to prevent scrambling.
  • Be gentle when folding in egg whites to keep the cake light and airy.
  • Using coconut sugar adds a subtle caramel flavor and keeps the recipe refined sugar-free.
  • Line the pan with parchment paper for easier removal of the cake without breaking.
  • This recipe produces a naturally gluten-free chocolate cake due to the absence of flour.
  • Store leftover cake in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness.
