Fiesta Chicken is a vibrant, slow-cooked Mexican-inspired dish featuring tender shredded chicken simmered with black beans, corn, salsa, and cream cheese. Perfect for a hassle-free weeknight dinner, it’s delicious served over rice or wrapped in warm tortillas for a festive meal.

Ingredients

Chicken & Beans

  • 4 boneless skinless chicken breasts (around 1.5 lbs), frozen or thawed
  • 1 (15 1/2 ounce) can black beans, drained and rinsed
  • 1 (15 ounce) can corn, drained

Sauce & Seasoning

  • 1 (15 ounce) jar of your favorite salsa
  • 2 tablespoons taco seasoning (optional)
  • 1 (8 ounce) package cream cheese, softened

Instructions

  1. Prepare the Crock Pot: Place the frozen or thawed chicken breasts into the crock pot. Add the drained black beans, corn, salsa, and optional taco seasoning. Stir gently to combine without removing chicken from the bottom. Cover and cook on low for about 4-5 hours, or until the chicken is fully cooked and tender.
  2. Shred the Chicken: Once the chicken is cooked, remove each breast from the crock pot and shred it using two forks. Return the shredded chicken back into the crock pot, mixing well with the other ingredients.
  3. Add Cream Cheese: Place the softened cream cheese on top of the chicken mixture and let it sit uncovered for about 30 minutes. This allows the cream cheese to soften and melt into the sauce. Stir thoroughly until the cream cheese is fully incorporated, creating a creamy and flavorful mixture.
  4. Serve: Spoon the fiesta chicken over cooked rice or warm flour tortillas for a festive and filling meal. Enjoy your flavorful fiesta chicken feast!
