These Family Favorite Mini Pancakes are bite-sized, fluffy, and perfect for dipping in syrup. With a simple batter made from melted butter, sugar, milk, egg, and vanilla, these pancakes cook quickly on a skillet to golden perfection. Ideal for breakfast or brunch, they’re fun to eat and sure to please the whole family.

Ingredients

Wet Ingredients

  • 1/2 cup (1 stick) unsalted butter, melted
  • 3/4 cup milk
  • 1 large egg
  • 1/2 teaspoon vanilla extract

Dry Ingredients

  • 1/2 cup granulated sugar
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda

Instructions

  1. Prepare the batter: In a large bowl, melt the butter and allow it to cool slightly. Whisk in the granulated sugar, then add the milk, egg, and vanilla extract, mixing well to combine. Gradually stir in the all-purpose flour and baking soda until the batter is smooth and evenly mixed.
  2. Heat the cooking surface: Place a skillet or griddle over medium heat and let it warm thoroughly. The pan should be hot enough so the batter sizzles gently when dropped in.
  3. Cook mini pancakes: Using a ½ teaspoon measuring spoon, carefully scoop small amounts of batter onto the hot skillet. Allow the pancakes to cook until bubbles start to form on the surface, about 45 seconds. Flip each pancake and cook for an additional 30 to 45 seconds or until both sides are lightly browned.
  4. Serve: Remove pancakes from the skillet and serve warm. Enjoy them by dipping in syrup or drizzling syrup over the top as preferred.

Notes

  • Make sure the melted butter is slightly cooled before adding other ingredients to prevent cooking the egg.
  • Use a non-stick skillet or lightly grease the pan to prevent sticking.
  • These mini pancakes cook quickly, so keep an eye on them to avoid burning.
  • For fluffier pancakes, you can substitute baking soda with baking powder (1 teaspoon) if baking soda is not available, but adjust other ingredients if needed.
  • Pancakes can be kept warm in a low oven while cooking the remaining batter.
