These flavorful Fajita Steak Kabobs are marinated in a zesty mixture of olive oil, lime juice, and fajita seasoning, then grilled to perfection with vibrant bell peppers and onions. Perfect for a quick and satisfying weeknight dinner or a weekend cookout, these kabobs offer a delicious and colorful way to enjoy classic fajita flavors on a skewer.

Ingredients

For the Marinade

  • 1/4 cup olive oil
  • 1/2 tablespoon lime juice
  • 3 tablespoons fajita seasoning (or 1.2 ounce package)

Main Ingredients

  • 1 pound top sirloin steak, cubed
  • 1 red bell pepper, cut into squares
  • 1 yellow bell pepper, cut into squares
  • 1 red onion, cut into squares

Instructions

  1. Prepare the Marinade: In a small measuring cup, whisk together the olive oil, lime juice, and fajita seasoning until fully combined to create a flavorful marinade.
  2. Marinate the Steak: Place the cubed sirloin steak into a plastic bag or reusable container, pour the marinade over the meat, seal, and shake well to coat all pieces evenly. Refrigerate and let it marinate for 30 minutes to absorb the flavors.
  3. Preheat the Grill: While the steak is marinating, preheat your grill to medium heat to ensure an even cooking temperature for the kabobs.
  4. Assemble the Kabobs: Thread the bell pepper, onion, and marinated steak pieces alternately onto skewers. Each skewer should have 5 pieces of meat along with the vegetables. If any meat remains, prepare an additional skewer.
  5. Grill the Kabobs: Place the assembled kabobs on the preheated grill and cook for 6 minutes. Carefully flip them using an oven mitt or glove, then grill for another 6 minutes until the steak is cooked to your desired doneness and the vegetables are slightly charred and tender.
  6. Serve: Serve the kabobs directly off the skewer for a rustic presentation or with warm tortilla shells for a fajita-style meal.

Notes

  • Soaking wooden skewers in water for at least 30 minutes before grilling helps prevent burning.
  • You can substitute top sirloin steak with flank steak or skirt steak for slightly different texture and flavor.
  • If you prefer, add other vegetables such as zucchini or mushrooms to the skewers.
  • Use metal skewers cautiously when flipping as they will be hot.
  • Leftover kabobs can be refrigerated and reheated on the grill or stovetop the next day.
