Ingredients

Beef Mixture

  • 1 pound ground beef
  • 1/2 yellow onion, diced
  • 1 packet (or equivalent) taco seasoning
  • 3/4 cup water

Base and Toppings

  • 2 bags (16 ounces each) tortilla chips
  • 1 can refried beans
  • 16 ounces shredded cheese (cheddar and Monterey jack blend)
  • 3 roma tomatoes, diced
  • 2 to 3 green onions, sliced

Instructions

  1. Preheat Oven: Preheat your oven to 400 degrees Fahrenheit to get it ready for baking the nachos later.
  2. Brown Beef and Onions: On the stovetop, cook the ground beef and diced onions over medium-high heat for about 8 minutes until fully browned; then drain excess fat.
  3. Add Taco Seasoning: Return the drained beef to the pan and sprinkle the taco seasoning evenly over it.
  4. Simmer Beef Mixture: Stir in 3/4 cup water, bring the mixture to a simmer, then reduce heat and let it cook until most of the liquid evaporates, about 5 minutes, allowing the flavors to meld.
  5. Prepare Baking Sheets: While the beef simmers, spread a generous layer of tortilla chips on two baking sheets lined with parchment paper.
  6. Add Refried Beans: Spoon refried beans evenly over the chips on both pans; the beans are thick, but will soften and spread during baking.
  7. Top with Beef: Distribute half of the cooked ground beef mixture over each pan of chips and beans.
  8. Add Cheese: Sprinkle all of the shredded cheese evenly across both pans.
  9. Bake Nachos: Place the baking sheets in the preheated oven and bake for 15 minutes until the cheese is melted and bubbly.
  10. Add Fresh Toppings: Remove the nachos from the oven, then sprinkle diced tomatoes and sliced green onions on top for a fresh contrast.
  11. Serve Immediately: Serve the nachos hot for the best texture and flavor.

Notes

  • You can customize the cheese blend according to your preference; mozzarella or pepper jack work well too.
  • For extra heat, add jalapeño slices or a drizzle of hot sauce before serving.
  • Use a sturdy baking sheet to prevent chips from burning and ensure even cooking.
  • Leftover nachos can be reheated in the oven at 350°F for about 10 minutes to retain crispiness.
  • Refried beans can be substituted with black beans or pinto beans for a different flavor.
