A classic and creamy egg salad sandwich recipe that is quick to prepare, perfect for a healthy lunch or snack. Made with hard-boiled eggs, mayonnaise, and mustard, this sandwich is easy to customize and enjoy with fresh lettuce or your favorite bread.

Ingredients

Egg Salad

  • 6 large hard boiled eggs, peeled
  • 3-4 tablespoons mayonnaise (or Greek yogurt), to taste
  • 1 teaspoon yellow mustard
  • Salt and pepper, to taste

For Serving

  • 8 slices sandwich bread
  • Lettuce (optional)

Instructions

  1. Prepare the Egg Salad: Mash the peeled hard-boiled eggs in a mixing bowl until broken down into small pieces. Add yellow mustard, mayonnaise (or Greek yogurt), salt, and pepper. Mix everything thoroughly until well combined. Taste and adjust seasoning as needed to your preference.
  2. Assemble the Sandwiches: Take two slices of sandwich bread and spread a generous spoonful of the egg salad mixture on one slice. Top with lettuce if desired, then cover with the other slice of bread to form a sandwich. Repeat to make about 4 sandwiches.
  3. Store Leftovers: Transfer any leftover egg salad to an airtight container and refrigerate. Consume within 5 days, depending on the freshness of the eggs, to ensure safety and maintain flavor.

Notes

  • For a healthier version, substitute mayonnaise with Greek yogurt.
  • Add chopped celery or green onions for extra crunch and flavor.
  • Use whole grain or gluten-free bread based on dietary needs.
  • Egg salad can be served on crackers or in lettuce wraps as alternatives to sandwiches.
  • Ensure eggs are fully cooked and cooled before preparing the salad.
