A vibrant and nutritious Edamame Salad with a creamy, tangy peanut sauce. This easy-to-make salad combines protein-rich edamame, fresh colorful vegetables, and a flavorful peanut dressing, perfect as a light lunch or side dish for any meal.

Ingredients

Salad Ingredients

  • 16 ounces frozen shelled edamame
  • 1 cup shredded red cabbage
  • 1 cup shredded carrots
  • 1/2 cup chopped green onions
  • 2 cups chopped kale
  • 1/4 cup chopped cilantro (optional)
  • 1/2 cup chopped peanuts (or cashews)

Peanut Sauce

  • 6 tablespoons creamy peanut butter
  • 3 tablespoons seasoned rice vinegar
  • 3 tablespoons low sodium soy sauce
  • 3 tablespoons pure maple syrup
  • 1 teaspoon toasted sesame oil
  • 1/4 teaspoon ground ginger
  • 1 teaspoon Sriracha hot sauce (or to taste)

Instructions

  1. Prepare Edamame: Cook or thaw the frozen shelled edamame according to the package instructions. Once cooked, rinse the edamame under cold water to cool it down and stop the cooking process.
  2. Combine Salad Ingredients: In a large mixing bowl, add the cooled edamame along with the shredded red cabbage, shredded carrots, chopped green onions, chopped kale, cilantro if using, and half of the chopped peanuts or cashews.
  3. Make Peanut Sauce: In a small to medium bowl, whisk together creamy peanut butter, seasoned rice vinegar, low sodium soy sauce, pure maple syrup, toasted sesame oil, ground ginger, and Sriracha hot sauce until smooth. If the sauce is too thick, gradually whisk in a small amount of warm water to achieve a pourable consistency.
  4. Toss Salad with Sauce: Pour the prepared peanut sauce over the mixed salad ingredients. Toss thoroughly until every component is evenly coated with the sauce.
  5. Chill and Serve: Sprinkle the remaining chopped peanuts or cashews over the top for extra crunch. Cover the salad and refrigerate for at least one hour to allow the flavors to meld before serving for the best taste.

Notes

  • This salad can be prepared a day ahead for enhanced flavors.
  • For a spicier kick, adjust the amount of Sriracha to taste.
  • You can substitute peanut butter with almond or cashew butter for a different flavor profile.
  • Adding fresh lime juice can brighten the peanut sauce further.
  • Make sure to rinse the edamame well after cooking to remove excess salt if using pre-seasoned edamame.
