Steamed Broccoli on the Stovetop

  • 2 medium heads broccoli (divided into florets)
  • 1 tbsp butter
  • Kosher salt (to taste)
  • Ground pepper (to taste)
  • 1.5 to 2 inches water for steaming

Instructions

  1. Roasted Broccoli: Preheat your oven to 425°F and position a rack in the lower third. Prepare a baking sheet lined with parchment paper. Toss broccoli florets with olive oil and kosher salt until well coated, then spread them evenly on the baking sheet without overcrowding. Roast for 20-22 minutes until tender when pierced with a knife. Season with ground pepper and serve immediately.
  2. Grilled Broccoli: Combine the broccoli florets with olive oil, minced garlic, salt, and pepper in a bowl. Prepare your grill by laying foil over the grates or using a grill pan and heating it to medium. Arrange the broccoli evenly on the grill or pan, covering with the lid. Grill for 4 minutes, flip using tongs, and grill an additional 4-5 minutes until tender and lightly charred. Finish by sprinkling lemon juice if desired and serve immediately.
  3. Sautéed Broccoli: Heat a 12-inch skillet over medium-high heat and add olive oil. When shimmering, add the broccoli and sauté, stirring occasionally, until the edges begin to brown, about 4 minutes. Add water or broth, cover, and cook for 2 minutes. Remove the lid and cook uncovered for another 1-2 minutes until liquid evaporates and florets are tender. Alternatively, use stir fry sauce instead of water—cook uncovered, stirring frequently for 3-4 minutes until tender and sauce thickens. Season with salt and pepper and serve immediately.
  4. Steamed Broccoli in the Microwave: Place broccoli florets in a microwave-safe bowl, sprinkle with a pinch of salt, and add 1/4 cup water. Cover with a microwave-safe plate and cook for 4 minutes for crisp-tender or 5 minutes for softer broccoli. Drain the water and toss the broccoli with butter until evenly coated. Season with additional salt and pepper as desired and serve.
  5. Steamed Broccoli on the Stovetop: Fill a pot with 1.5 to 2 inches of water and set a steamer basket inside. Bring water to a boil over medium heat, then reduce to a simmer. Place broccoli florets in the steamer basket, sprinkle with 1/2 tsp kosher salt, cover with a lid, and steam for 5 minutes for crisp-tender or 6-7 minutes for softer broccoli. Remove from heat, toss with butter, season with salt and pepper, and serve immediately.

Notes

  • For roasting, avoid overcrowding to ensure broccoli crisps rather than steams.
  • Adjust seasoning with garlic, lemon juice, or stir fry sauce for flavor variations.
  • When sautéing, adding a splash of water or broth helps steam and tenderize the broccoli.
  • Microwave steaming is a quick method suitable for busy days and retains nutrients well.
  • Steaming on the stovetop preserves broccoli's vibrant color and texture.
