This Easy Watermelon Sorbet is a refreshing and simple frozen treat perfect for hot days. Made with just watermelon, sugar, water, and lemon juice, it's light, naturally sweet, and bursting with fresh fruit flavor. The recipe involves freezing cubed watermelon, blending it with a homemade simple syrup, and then freezing the mixture to create a smooth, icy sorbet that can be enjoyed immediately or stored for later.

Ingredients

Fruit Base

  • 6 cups cubed seedless watermelon (3/4-inch cubes)

Simple Syrup

  • ¼ cup sugar
  • ¼ cup water

Additional

  • Juice from ½ lemon

Instructions

  1. Freeze the Watermelon: Line a baking sheet with parchment paper and spread the cubed watermelon evenly. Place the tray in the freezer and freeze the watermelon for at least 4 hours or overnight until completely frozen.
  2. Make the Simple Syrup: In a small saucepan over high heat, combine the sugar and water. Stir constantly until the sugar fully dissolves, then remove from heat and stir in the lemon juice. Set aside to cool slightly.
  3. Puree the Frozen Watermelon: In a food processor fitted with a steel blade, add half of the frozen watermelon cubes. Drizzle half of the warm simple syrup over the fruit. Blend, pausing to scrape down the sides as needed. This process may take several minutes and require stirring intermittently to achieve a smooth sorbet texture. If the mixture is too icy and resists blending, add about 2 tablespoons of water to help it puree.
  4. Freeze the Sorbet: Transfer the pureed mixture to a loaf pan or an airtight container and freeze. Repeat the pureeing and freezing process with the remaining frozen watermelon and remaining simple syrup.
  5. Serve or Store: The sorbet can be served immediately for a soft-serve texture or frozen for up to 2 weeks for a firmer consistency.

Notes

  • For a smoother sorbet, ensure the watermelon is fully frozen before blending.
  • If the food processor struggles with icy texture, adding a bit of water helps the puree process.
  • Adjust sweetness by increasing or decreasing sugar in the simple syrup according to taste.
  • The sorbet is best consumed within 2 weeks for optimal flavor and texture.
  • Serving the sorbet immediately after blending gives a soft-serve style dessert.
