A refreshing and easy tossed salad featuring a crisp mix of iceberg lettuce, romaine, fresh vegetables, and a tangy homemade vinaigrette. Perfect for a quick side dish or light meal, this salad combines crunchy textures and vibrant flavors with a simple dressing made from olive oil, white vinegar, Dijon mustard, and honey.

Ingredients

Vegetables

  • 1 small iceberg lettuce (bite size pieces)
  • 3 cups romaine lettuce (bite size pieces)
  • 1 small carrot (cut in matchsticks)
  • 1 medium English cucumber (sliced)
  • 4 medium radishes (sliced)
  • 2 cups cherry tomatoes (cut in halves)
  • ½ red onion (sliced)

Cheese

  • ½ cup cheddar cheese (shredded)

Dressing

  • ¼ cup extra virgin olive oil
  • 2 tablespoons white vinegar
  • 1 teaspoon Dijon mustard
  • 1 tablespoon honey
  • Salt and pepper (to taste)

Instructions

  1. Prepare the salad ingredients. Add all the salad vegetables and shredded cheddar cheese into a large mixing bowl, combining the iceberg, romaine, carrot, cucumber, radishes, cherry tomatoes, red onion, and cheese.
  2. Toss the salad. Gently toss all the ingredients together to mix evenly.
  3. Make the dressing. In a small bowl or jar, whisk together extra virgin olive oil, white vinegar, Dijon mustard, honey, and salt and pepper to taste until well combined and emulsified.
  4. Dress and serve. Pour the prepared dressing over the salad, toss again to coat all ingredients evenly, and serve immediately. Optionally, top with extra grated cheese, chopped nuts, or fresh herbs for added flavor and texture.

Notes

  • For added protein, consider topping the salad with grilled chicken or chickpeas.
  • This salad can be customized with your favorite fresh herbs such as basil or parsley.
  • Use freshly squeezed lemon juice instead of vinegar for a different tang.
  • To keep the salad crisp for later, store the dressing separately and toss before serving.
