These Easy Meatloaf Muffins are a quick and delicious twist on classic meatloaf, perfect for individual servings. Made with ground beef (or turkey or chicken), combined with flavorful ingredients and baked to perfection, then glazed with tangy BBQ sauce for a savory finish. Ideal for meal prep or family dinners.

Ingredients

Meatloaf Mixture

  • 3 pounds ground beef (or ground turkey or ground chicken)
  • 2 large eggs
  • 1 cup bread crumbs (or cracker crumbs)
  • 2 tablespoons Worcestershire sauce (or coconut aminos)
  • 1/3 cup ketchup
  • 1 tablespoon brown sugar
  • 1 teaspoon Stone House Seasoning
  • 1/2 medium onion, diced and cooked until tender
  • 1/2 medium green pepper, diced and cooked until tender

Glaze

  • BBQ sauce (store-bought or homemade)

Instructions

  1. Prep. Preheat the oven to 375º F. Brush muffin pan indentions with olive oil to prevent sticking. Set the pan aside for use.
  2. Make the Meatloaf Mixture. In a medium mixing bowl, combine ground meat with eggs, bread crumbs, Worcestershire sauce, ketchup, brown sugar, Stone House Seasoning, cooked diced onion, and cooked diced green pepper. Mix well until all ingredients are evenly incorporated. Portion the mixture into the prepared muffin pan indentions, filling each about three-quarters full.
  3. Bake and Glaze. Place the muffin pan in the preheated oven. Bake until the internal temperature reaches 160º F for ground beef or 165º F for ground turkey and chicken, approximately 20 to 25 minutes. Remove the muffins from the oven and spread a generous layer of BBQ sauce on top of each muffin to glaze. Return the pan to the oven and bake for an additional 5 minutes to set the glaze.
  4. Serve. Remove the meatloaf muffins from the oven and let them cool briefly. Carefully remove from the muffin pan and serve warm with your favorite sides.

Notes

  • You can substitute ground turkey or chicken if you prefer a leaner option.
  • Cook the diced onion and green pepper beforehand to soften them and enhance flavor.
  • Use a meat thermometer to ensure the meat is cooked to a safe internal temperature.
  • Feel free to customize the seasoning blend or glaze sauce to suit your taste.
  • These muffins freeze well and make great leftovers for quick meals.
