Flavorful and fun, these Easy French Dip Sliders are perfect as an appetizer, lunch, or dinner. Featuring tender roast beef, melted provolone cheese, caramelized onions, and buttery rolls brushed with savory onion soup mix, these sliders are irresistibly delicious and simple to make.

Ingredients

For the Onions:

  • 3 tablespoons unsalted butter
  • 1 medium onion, thinly sliced
  • 2 teaspoons fresh thyme, minced
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper

For the Sliders:

  • 12 sweet rolls
  • 10 slices provolone cheese
  • 14 ounces sliced deli roast beef

For the Topping:

  • 1/2 cup unsalted butter, melted
  • 1 1/2 tablespoons dried onion soup mix

For the Au Jus:

  • 1 packet au jus gravy mix
  • 3 cups water

Optional Garnish:

  • Fresh chopped parsley

Instructions

  1. Caramelize the Onions: In a large skillet over medium heat, melt 3 tablespoons of unsalted butter. Add 1 thinly sliced medium onion and coat it in the butter. Cook, stirring occasionally, for about 12 to 15 minutes until the onions are soft and browned but not burnt.
  2. Season Onions: Add 2 teaspoons of minced fresh thyme, 1/4 teaspoon kosher salt, and 1/4 teaspoon black pepper to the onions. Stir well to combine, then remove the skillet from heat and set aside.
  3. Prepare the Rolls: Preheat your oven to 350°F (175°C). Take the 12 sweet rolls out of the package, keeping them connected. Using a large knife, carefully slice across the rolls to separate the tops from the bottoms. Place the bottom halves, cut side up, into an 11x7 inch baking dish.
  4. Assemble the Sliders: Layer half of the 10 slices of provolone cheese evenly over the bottom halves of the rolls. Add 14 ounces of sliced deli roast beef on top of the cheese. Spread the caramelized onions evenly over the roast beef, then top with the remaining cheese slices. Finally, place the roll tops over everything.
  5. Prepare Butter Topping: In a small bowl, mix 1/2 cup melted unsalted butter with 1 1/2 tablespoons dried onion soup mix. Brush or pour this mixture evenly over the tops of the rolls to ensure full coverage.
  6. Bake the Sliders: Cover the baking dish loosely with foil, ensuring the foil does not touch the rolls. Bake in the preheated oven for 25 minutes. Remove the foil and bake an additional 5 minutes to brown and crisp the tops of the rolls.
  7. Make the Au Jus: While the sliders are baking, prepare the au jus gravy according to package instructions by mixing 1 packet of au jus gravy mix with 3 cups of water and heating until ready for serving.
  8. Serve: Once the sliders are baked and golden, remove them from the oven. Optionally, garnish with fresh chopped parsley. Serve immediately with the hot au jus on the side for dipping.

Notes

  • Make sure to cook the onions slowly to bring out their natural sweetness without burning.
  • If you want a crispier top on your sliders, broil them for 1-2 minutes after baking but watch closely to prevent burning.
  • You can substitute provolone cheese with Swiss or mozzarella if preferred.
  • Leftover au jus can be refrigerated and reheated for another meal.
  • For a spicy twist, add a few dashes of hot sauce to the au jus before serving.
