This Easy Crockpot Sausage & Tortellini Soup is a hearty and comforting dish featuring Italian sausage, creamy cheese tortellini, fresh spinach, and a rich tomato broth all slow-cooked to perfection. It’s a simple, one-pot meal perfect for busy days when you want a warm, flavorful soup without much fuss.

Ingredients

Sausage and Base

  • 1 lb Italian sausage, browned, drained and chopped
  • 1 15 oz can Italian diced tomatoes (use 2 cans if you prefer a tomato-rich soup)
  • 4 cups vegetable or chicken broth (32 oz container)
  • 8 ounces cream cheese, cubed

Vegetables and Seasonings

  • 3-4 cups fresh spinach
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp Italian seasoning
  • ½ tbsp black pepper

Pasta

  • 1 20 oz bag frozen cheese tortellini

Instructions

  1. Prepare the Base: Add the browned, drained, and chopped Italian sausage to your slow cooker. Pour in the broth and diced tomatoes (use one can or two based on your tomato preference). Add the cubed cream cheese and sprinkle in garlic powder, onion powder, Italian seasoning, and black pepper. Stir everything well to combine the ingredients.
  2. Cook the Soup: Cook the mixture on high for 3-4 hours or on low for 6-8 hours until the cream cheese has fully melted and incorporated into the broth, creating a creamy base.
  3. Add Spinach and Tortellini: Stir in the fresh spinach and frozen cheese tortellini. Continue cooking for an additional 30 minutes or until the tortellini is cooked to your liking and the spinach has wilted.
  4. Serve: Serve the soup hot immediately. Store any leftovers in an airtight container in the refrigerator for up to 3 days.

Notes

  • You can adjust the amount of diced tomatoes to make the soup more or less tomato-forward.
  • For a spicier kick, consider adding crushed red pepper flakes when adding seasonings.
  • Ensure the sausage is fully browned and drained to reduce excess grease in the soup.
  • This soup stores well and can be reheated gently on the stovetop or microwave.
  • If you prefer, substitute cream cheese with heavy cream for a different creamy texture.
