Coronation Chicken is a flavorful and creamy chicken salad dish originally created for the coronation of Queen Elizabeth II. This easy recipe combines tender chicken breasts with a mild curry-spiced yogurt and mayo sauce, enhanced by sweet mango chutney and apricots. Perfect for sandwiches, salads, or a light meal, it can be cooked either in the oven or air fryer for convenience.

Ingredients

Chicken and Marinade

  • 650 g Chicken breasts (x4 breasts)
  • 3 tbsp Greek yoghurt
  • 1 tbsp Mild curry powder

Sauce

  • 6 tbsp Mayonnaise
  • 2 tbsp Greek yoghurt
  • 2 tbsp Mango chutney
  • 2 tsp Mild curry powder (Add 1 tsp more if you prefer a stronger taste)
  • Sea salt and freshly ground black pepper, to taste

Add-ins and Garnish

  • 50 g Dried apricots (chopped into 1 cm pieces)
  • 2 tbsp Flaked toasted almonds

Instructions

  1. Preheat oven or air fryer. If using the oven method, preheat to 200°C/400°F fan. For air frying, no preheat setting is required but set air fryer to 200°C/400°F before cooking.
  2. Marinate the chicken. In a large bowl, combine chicken breasts, 3 tbsp Greek yoghurt, and 1 tbsp mild curry powder, mixing well to coat the chicken evenly.
  3. Cook the chicken - Oven method. Lightly oil or line a baking tray with foil or greaseproof paper, then place the chicken breasts on top. Roast for 18-20 minutes, turning halfway through. Use a thermometer to confirm internal temperature reaches 75°C (165°F). Then set aside to cool.
  4. Cook the chicken - Air fryer method. Spray the bottom of the air fryer basket with oil. Arrange the coated chicken breasts carefully in the basket and spray the tops lightly with oil. Air fry at 200°C/400°F for 10-15 minutes, checking for doneness with a thermometer. Set aside to cool.
  5. Prepare the coronation chicken sauce. Shred, slice, or chop the cooked chicken into approximately 1 cm cubes. In a large bowl, combine the chicken with mayonnaise, 2 tbsp Greek yoghurt, 2 tbsp mango chutney, 2 tsp mild curry powder, salt, and freshly ground pepper. Mix thoroughly until well combined.
  6. Add apricots and garnish. Stir in the chopped dried apricots, then sprinkle with flaked toasted almonds before serving.

Notes

  • Cooking times may vary depending on the thickness of the chicken breasts; always check with a meat thermometer.
  • For a stronger curry flavor, adjust the curry powder in the sauce as preferred.
  • This dish can be served chilled or at room temperature, making it ideal for picnics or sandwiches.
  • To make the recipe gluten-free, ensure that the curry powder and chutney contain no gluten additives.
  • To toast flaked almonds, gently heat them in a dry pan over medium-low heat until golden and fragrant, stirring frequently to avoid burning.
