This Easy Corn Casserole recipe combines sweet corn with creamed corn, Jiffy corn muffin mix, sour cream, and melted butter to create a creamy, comforting side dish perfect for weeknight dinners or holiday gatherings. Baked until golden and fluffy, this casserole is simple to prepare and delivers classic homestyle flavors that everyone will enjoy.

Ingredients

Ingredients

  • 1 box of Jiffy Corn Muffin mix (8 ounces, dry mix only)
  • 15 ounces whole kernel corn (drained)
  • 15 ounces creamed corn (not drained)
  • 1 cup sour cream
  • 1/2 cup melted butter

Instructions

  1. Preheat Oven: Preheat the oven to 350ºF (175ºC). Lightly coat an 8×8 inch baking pan with cooking spray to prevent sticking.
  2. Mix Ingredients: In a medium bowl, combine the dry Jiffy corn muffin mix, drained whole kernel corn, creamed corn (with its liquid), sour cream, and melted butter. Stir thoroughly until the mixture is well blended.
  3. Bake: Pour the mixture into the prepared baking dish and spread evenly. Bake uncovered in the preheated oven for 45-50 minutes, or until the top is lightly golden brown and the casserole is set.
  4. Season and Garnish: Remove the casserole from the oven and season with salt and freshly ground black pepper to taste. Optionally, garnish with chopped fresh parsley or sliced green onions for added color and flavor before serving.

Notes

  • Make sure the whole kernel corn is well drained to avoid excess moisture.
  • For a richer casserole, you can substitute sour cream with Greek yogurt.
  • If you prefer a slightly sweeter casserole, add a tablespoon of sugar to the mix before baking.
  • The casserole can be prepared ahead of time and refrigerated; bake when ready, adding extra a few minutes if chilled.
  • This dish pairs well with grilled meats, roasted chicken, or as part of a holiday buffet.
