Ingredients

Chicken Filling

  • 1 ½ cups cooked shredded chicken
  • ¼ cup easy enchilada sauce
  • Salt and black pepper, to taste

Assembly

  • 8 corn or flour tortillas
  • 1 cup shredded Mexican-blend cheese

Topping

  • 1 ¾ cup easy enchilada sauce
  • 1 ½ cups shredded Mexican-blend cheese

Optional Garnishes

  • Diced onions
  • Chopped cilantro
  • Sour cream
  • Shredded lettuce
  • Cotija cheese

Instructions

  1. Prepare Chicken Mixture: Preheat the oven to 350ºF. In a large bowl, combine the shredded chicken, ¼ cup of enchilada sauce, and a generous pinch of salt and black pepper. Mix well and taste, adjusting seasoning as needed.
  2. Warm Tortillas: To make tortillas pliable, wrap corn tortillas in a damp paper towel and microwave for 1 minute, flipping halfway through. For flour tortillas, microwave on a plate for 1 minute, flipping halfway until warm and flexible.
  3. Assemble Enchiladas: Evenly distribute the chicken mixture and 1 cup of shredded cheese over each tortilla. Roll each tortilla tightly, ensuring the seam is on the bottom, and place them seam side down in a large baking dish.
  4. Add Sauce and Cheese: Pour the remaining 1 ¾ cups of enchilada sauce evenly over the rolled tortillas. Sprinkle the remaining 1 ½ cups of shredded cheese on top.
  5. Bake: Bake the enchiladas in the oven at 350ºF for 20 minutes, or until the cheese is melted and bubbly.
  6. Serve: Remove from the oven and serve immediately. Garnish with optional diced onions, chopped cilantro, sour cream, shredded lettuce, or cotija cheese as desired.

Notes

  • If using flour tortillas, warming them helps prevent cracking when rolling.
  • Use leftover rotisserie chicken for convenience.
  • Feel free to customize toppings based on preference.
  • Leftovers can be refrigerated and reheated in the oven or microwave.
