This Easy Burrito Casserole is a flavorful and hearty dish perfect for a family dinner. Layers of seasoned ground beef, beans, corn, and cheese are baked between soft flour tortillas, creating a deliciously cheesy and satisfying meal that comes together quickly in just 35 minutes.

Ingredients

Meat and Seasoning

  • 1 ½ lb. Ground beef
  • 1 Pack taco seasoning mix

Sauces and Mix-ins

  • 1 Can mild enchilada sauce (about 10 oz)
  • 1 Can refried beans (about 16 oz)
  • 1 Can corn, drained (about 15 oz)
  • 1 Small can of green chilis (4 oz)

Other Ingredients

  • 8 Large flour tortillas, cut in half
  • 2 Cups taco blend shredded cheese
  • Green onions for garnish

Instructions

  1. Preheat the oven: Preheat your oven to 350 degrees Fahrenheit to prepare for baking the casserole.
  2. Cook the ground beef: In a large skillet over medium-high heat, cook the ground beef until it is completely browned, breaking it up with a spoon as it cooks.
  3. Season the beef: Add the taco seasoning mix to the browned meat and stir to combine. Continue to sauté for an additional 2-3 minutes to blend the flavors.
  4. Add vegetables and sauces: Stir in the drained corn, mild enchilada sauce, refried beans, and green chilis until everything is well combined. Allow the mixture to simmer for 5 minutes to meld the flavors.
  5. Layer the casserole - first layer: Lightly grease a 9x13 inch baking dish. Arrange 4 halved flour tortillas to cover the bottom of the dish evenly.
  6. Add first meat and cheese layer: Spread half of the meat mixture over the tortillas, then sprinkle half of the shredded taco blend cheese on top.
  7. Layer the casserole - second layer: Place the remaining 4 halved tortillas over the cheese layer. Top with the remaining meat mixture and then the rest of the shredded cheese.
  8. Bake the casserole: Place the casserole dish in the preheated oven and bake for 20 minutes, until the cheese is melted and bubbly.
  9. Garnish and serve: Remove from oven and garnish with freshly chopped green onions if desired. Serve warm and enjoy your easy burrito casserole!
