This Easy Bunny Cake is a delightful and festive Easter treat made from two coconut cakes shaped into a cute bunny head. The moist yellow cake is layered with creamy vanilla frosting and decorated with flaked coconut, jellybeans, and red licorice to create adorable bunny features. Perfect for family gatherings and holiday celebrations, this charming cake combines simple ingredients and straightforward steps for a beautiful and tasty dessert.

Ingredients

Cake:

  • 1 (15.25 ounce) package yellow cake mix
  • 1 cup water
  • ⅓ cup vegetable oil
  • 3 large eggs

Frosting and Decoration:

  • 1 (16 ounce) container vanilla frosting
  • 3 ¾ cups flaked coconut
  • 30 small jellybeans
  • 4 sticks red licorice

Instructions

  1. Preheat and Prepare Pans: Preheat your oven to 350 degrees F (175 degrees C). Grease the sides and bottoms of two 9-inch metal springform pans thoroughly to prevent sticking.
  2. Mix Cake Batter: In a large bowl, combine the yellow cake mix, water, vegetable oil, and eggs. Beat on low speed with an electric mixer for about 30 seconds until ingredients are moistened. Increase to medium speed and continue beating for 2 minutes until smooth and well blended.
  3. Bake the Cakes: Pour the batter evenly into the prepared pans. Bake in the preheated oven for 23 to 28 minutes, or until a toothpick inserted into the center comes out clean.
  4. Cool Cakes: Let the cakes cool in the pans for 15 minutes. Then, carefully remove the cakes from the springform pans and allow them to cool completely on wire racks, about 20 more minutes.
  5. Shape the Bunny: Place one whole cake on a serving tray to form the bunny's head. From the second cake, cut two convex-shaped ears from each side and attach them on either side of the head to form ears. Take the remaining concave-shaped piece and place it about 1/2 inch below the head to serve as the bunny’s bowtie.
  6. Frost the Bunny: Spread the vanilla frosting evenly over the entire cake, covering the head, ears, and bowtie. Pat the flaked coconut gently but evenly over the frosting to coat the top and sides of the bunny.
  7. Decorate the Bunny: Use the jellybeans to decorate the bunny’s face and bowtie, adding colorful accents. Cut the red licorice sticks into shorter pieces and arrange them on the face to create whiskers, giving your bunny its charming finishing touches.

Notes

  • Ensure the cakes are completely cooled before frosting to prevent the frosting from melting.
  • Use fresh coconut for the best texture and flavor, or substitute with shredded coconut if preferred.
  • For a firmer bowtie, you can chill the cake briefly before applying decorations.
  • Jellybean colors can be customized to match your Easter theme or preferences.
  • To simplify cleanup, line baking pans with parchment paper before greasing.
