Instructions

  1. The Pistachio Insert - Soak Gelatin: Place 1½ sheets of gelatin sheets in a bowl of cold water for 10 minutes to soften.
  2. Whisk Egg Yolks and Sugar: In a medium bowl, whisk 3 egg yolks with 2 tbsp sugar until pale and smooth.
  3. Heat Heavy Cream: Heat 1 cup heavy cream in a saucepan over medium heat until steaming, then remove from heat.
  4. Temper Egg Mixture: Slowly whisk the hot cream into the yolk mixture to prevent scrambling.
  5. Cook Custard: Return the mixture to the saucepan and cook over medium-low heat, stirring constantly until it thickens to 180–183°F (82–84°C).
  6. Add Gelatin and Pistachio Spread: Squeeze excess water from gelatin sheets and stir into hot custard until dissolved. Add ¼ cup pistachio spread and mix smooth.
  7. Freeze Insert: Pour custard into an 8-inch ring mold lined with plastic wrap and freeze for at least 3 hours until solid.
  8. Brownie Base - Preheat Oven: Set oven to 320°F (160°C). Grease and flour an 8-inch round cake pan, tapping out excess flour.
  9. Melt Butter and Chocolate: Microwave 4 tbsp butter and ¼ cup dark chocolate in short bursts until smooth.
  10. Whisk Egg and Sugar: In a separate bowl, whisk 1 egg with ¼ cup sugar until pale, then stir in melted chocolate mixture.
  11. Combine Ingredients: Stir in ½ tsp vanilla extract, ¼ cup flour, and salt until smooth, then fold in ⅓ cup crushed pistachios.
  12. Bake Brownie: Pour batter into pan and bake for 12 minutes; center should remain slightly soft. Cool completely in pan.
  13. Kataifi Crunch - Toast Kataifi: Melt 1 tbsp butter in a pan over medium heat. Add 1½ cups kataifi pastry and sauté for 5–7 minutes until golden and crispy, stirring constantly.
  14. Mix Crunch Layer: Cool toasted kataifi on paper towel, then mix with ½ cup pistachio spread.
  15. Layer Crunch on Brownie: Spread crunchy mixture evenly over cooled brownie, pressing lightly to adhere, then refrigerate to set.
  16. Chocolate Mousse - Soak Gelatin: Soak 3 gelatin sheets in cold water for 10 minutes. Place 1¼ cups chopped dark chocolate in heatproof bowl.
  17. Heat Milk Mixture: Heat 1 cup milk, ⅔ cup heavy cream, and 1 tsp vanilla until steaming.
  18. Temper Yolks and Sugar: Whisk 5 egg yolks with ½ cup sugar, then slowly whisk in hot milk mixture to avoid scrambling.
  19. Cook Custard: Return mixture to stove, cook to 180–183°F (82–84°C), then remove from heat and stir in squeezed gelatin sheets.
  20. Melt Chocolate and Combine: Microwave chopped dark chocolate until melted. Pour hot custard over chocolate and mix until smooth.
  21. Cool Mixture: Allow to cool to 95–104°F (35–40°C) at room temperature.
  22. Whip Cream and Fold: Whip 1⅓ cups cold heavy cream to soft peaks. Gently fold chocolate mixture into whipped cream in three batches keeping it light and airy.
  23. Assembly (Upside Down Method) - Prepare Mold: Line 10-inch ring mold bottom with plastic wrap tightly stretched.
  24. Pour and Set Base Mousse: Pour about ⅔ of mousse into mold and tap to remove air bubbles. Freeze 10 minutes to slightly firm.
  25. Place Pistachio Insert: Place frozen pistachio insert in center, pressing lightly.
  26. Add Remaining Mousse: Pour remaining mousse over insert.
  27. Add Brownie/Crunch Layer: Place brownie with crunch side down onto mousse, pressing gently to level with mousse sides.

  32. Blend Glaze: Blend with immersion blender on low-medium speed until smooth, keeping blade submerged to avoid bubbles.
  33. Cool and Strain Glaze: Strain glaze through metal sieve into pouring jug and cool to 86°F (30°C).
  34. Glaze Cake: Unmold frozen cake onto wire rack over tray. Pour glaze evenly and confidently over cake.
  35. Decorate and Thaw: Once glaze stops dripping, transfer cake to platter and thaw in refrigerator before serving.
  36. Optional Decoration - Make Chocolate Snowflakes: Melt 1 oz dark chocolate in microwave, spread thinly on silicone mat, let reach leather stage (matte, not hard), cut shapes, chill 10 minutes, peel off and spray with gold shimmer.

Notes

  • Ensure the custards reach the correct temperature (180–183°F) to fully cook the egg yolks for safety and correct texture.
  • Keep whisking while tempering yolks to prevent curdling.
  • Freeze the pistachio insert fully to maintain structure inside the mousse.
  • Gently fold whipped cream to keep the mousse light and airy.
  • Pour glaze at the precise temperature (86°F) for a smooth, glossy finish without melting the mousse.
  • The glaze and mousse cake must be fully frozen before glazing to prevent melting.
  • Kataifi pastry must be toasted carefully and stirred constantly to avoid burning.
  • Allow the cake to thaw in the fridge slowly to maintain the layers' texture.
  • Optional decorations add visual elegance but can be omitted if preferred.
