This decadent Chocolate Mousse recipe combines rich dark chocolate with airy meringue to create a light yet indulgent dessert. Perfectly smooth, creamy, and chilled, this mousse makes a sophisticated treat for any occasion, ready to impress guests with its velvety texture and elegant presentation.

Ingredients

Chocolate Base

  • 7 oz Dark Chocolate (200g), chopped
  • 1 cup Heavy Cream (240ml)
  • 1 tsp Vanilla Extract

Meringue

  • 4 Large Egg Whites (fresh, not boxed)
  • 1 cup Granulated Sugar (200g)
  • 1 pinch Salt

Instructions

  1. Chop Chocolate: Chop the dark chocolate into small pieces and place them in a large bowl. Set aside for later.
  2. Heat Cream: Pour the heavy cream and vanilla extract into a saucepan and heat over medium heat. Stir occasionally until the cream is scalding hot with steam rising and tiny bubbles forming around the edges, but do not boil.
  3. Melt Chocolate: Pour the hot cream over the chopped chocolate and let it sit for about a minute. Then, gently stir in concentric circles in the center of the bowl until all chocolate is melted and combined to form a smooth ganache. Let cool to room temperature.
  4. Prepare Double Boiler: Set up a double boiler with a heatproof bowl over a saucepan containing about an inch of simmering water. Ensure the bowl's bottom does not touch the water.
  5. Mix Egg Whites and Sugar: Add the egg whites, sugar, and salt to the heatproof bowl. Whisk gently to combine as it warms. Continue whisking constantly but gently until the sugar dissolves and the mixture reaches 160°F (71°C), or until it feels smooth between your fingers without graininess.
  6. Whip Meringue: Transfer the warm egg white mixture to a stand mixer fitted with a whisk attachment. Whip on medium speed until just slightly cooled and thickened, then increase to high speed and whip until glossy, firm peaks form. Stop before stiff peaks to maintain smooth incorporation.
  7. Combine Chocolate and Meringue: Ensure the ganache is at room temperature. Fold one-third of the meringue gently into the ganache using a rubber spatula. Then fold in the remaining meringue in two more additions, mixing carefully to keep the mixture light and airy without deflating the egg whites.
  8. Portion Mousse: Spoon or pipe the mousse into individual serving dishes such as ramekins, coupe glasses, or dessert rings for an elegant presentation.
  9. Chill: Refrigerate the mousse for at least 4 hours to set and develop flavor.
  10. Serve: Just before serving, top the mousse with chantilly cream and chocolate curls for a beautiful finishing touch.

Notes

  • Use fresh egg whites for best results; avoid using carton egg whites.
  • Do not let the cream boil when heating—it should only be scalding hot to prevent seizing the chocolate.
  • Be gentle when folding the meringue into the chocolate to maintain the mousse’s light texture.
  • If you do not have a stand mixer, a hand mixer can be used, but ensure the meringue is properly whipped.
  • For food safety, heating the egg whites to 160°F helps reduce risk of salmonella.
  • Chilling time can be extended for firmer mousse or prepared ahead of time.
