Ingredients

Chocolate Lava Cakes

  • 6 ounces (170g) high-quality semi-sweet chocolate
  • 1/2 cup (8 Tbsp; 113g) unsalted butter
  • 1/4 cup (31g) all-purpose flour (spooned & leveled)
  • 1/2 cup (60g) confectioners’ sugar
  • 1/8 teaspoon salt
  • 2 large eggs
  • 2 large egg yolks

Optional Toppings

  • Ice cream (optional)
  • Berries (optional)
  • Chocolate syrup (optional)

Instructions

  1. Prepare Ramekins: Spray four 6-ounce ramekins with nonstick cooking spray and dust with cocoa powder to ensure easy release of the cakes. Alternatively, you can prepare a 12-count muffin pan the same way, which will yield 6 cakes.
  2. Preheat Oven: Set oven temperature to 425°F (218°C) to ensure the proper high heat required to form a crust while keeping the center molten.
  3. Melt Chocolate and Butter: Coarsely chop the chocolate and place it in a medium heat-proof bowl with the butter. Microwave on high in 10-second increments, stirring after each, until fully melted and smooth. Set aside.
  4. Mix Dry Ingredients: In a small bowl, whisk together flour, confectioners’ sugar, and salt until evenly combined.
  5. Combine Eggs: In another bowl, whisk together the eggs and egg yolks until well blended.
  6. Make Batter: Slowly pour both the dry flour mixture and egg mixture into the melted chocolate and butter bowl. Gently mix with a silicone spatula or wooden spoon until smooth and slightly thick, using a whisk to remove any lumps if necessary.
  7. Fill Ramekins: Spoon the batter evenly into the prepared ramekins or muffin pan cups.
  8. Bake: Place the ramekins on a baking sheet and bake for 12–14 minutes until the sides are firm but the tops remain soft. If using a muffin pan, reduce baking time to 8–10 minutes.
  9. Cool and Invert: Allow cakes to cool for 1 minute, then place an inverted plate over each ramekin and carefully flip to release the cake. Use an oven mitt to protect your hands. For muffin pans, gently use a spoon to loosen cakes and invert onto plates.
  10. Add Toppings and Serve: Serve immediately while warm with optional ice cream, berries, or chocolate syrup to enhance the flavors and presentation.

Notes

  • Use high-quality semi-sweet chocolate for the best flavor and melting properties.
  • Dusting the ramekins with cocoa powder prevents sticking without adding extra sweetness like flour dusting would.
  • Baking times vary slightly if using a muffin pan; keep a close eye to avoid overbaking and losing the molten center.
  • Serve immediately to enjoy the warm, gooey lava center at its best.
