These Dark Chocolate and Sea Salt Nut Bars are a perfect mix of crunchy nuts, rich dark chocolate, and a hint of sea salt. Naturally sweetened with brown rice syrup, they make a wholesome and satisfying snack or light dessert.

Ingredients

  • 2 ½ cups unsalted nuts of choice (¾ cup cashews, ¾ cup peanuts, 1 cup almonds)
  • ½ cup puffed rice
  • ¼ cup brown rice syrup
  • 1 ½ teaspoon vanilla extract
  • ½ teaspoon sea salt
  • 1 cup dark chocolate chips
  • 2 teaspoons coconut oil
  • Optional: flaky salt for topping

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper.
  2. Spread the nuts evenly on a baking sheet and toast for 8–10 minutes until fragrant and lightly golden.
  3. In a large bowl, combine toasted nuts and puffed rice.
  4. In a small saucepan over low heat, mix brown rice syrup, vanilla extract, and sea salt until smooth and slightly runny.
  5. Pour the syrup mixture over the nut mixture and stir until well coated.
  6. Transfer the mixture into the prepared pan and press it down firmly with a spatula.
  7. Melt dark chocolate chips and coconut oil together in the microwave in 20-second intervals, stirring until smooth.
  8. Pour the melted chocolate over the nut mixture and spread evenly.
  9. Optionally, sprinkle flaky salt on top.
  10. Refrigerate for about 1 hour, or until the chocolate is set.
  11. Lift the bars out of the pan using the parchment paper and cut into even squares or rectangles.
