A refreshing and easy-to-make cucumber tomato salad featuring crisp cucumbers, ripe Roma tomatoes, vibrant red onion, and fresh herbs tossed in a tangy apple cider and red wine vinegar dressing. This light salad is perfect as a side dish for summer meals or anytime you want a healthy, flavorful salad in just 15 minutes.

Ingredients

Salad

  • 3 cups sliced cucumbers (1 ½ to 2 English cucumbers, peeled or unpeeled)
  • 3 Roma tomatoes, chopped (about 2 ½ cups)
  • ½ cup thinly sliced red onion
  • ¼ cup julienned or chopped fresh basil
  • 2 teaspoons chopped fresh dill

Dressing

  • ¼ cup extra virgin olive oil
  • ¾ cup apple cider vinegar
  • 1 tablespoon red wine vinegar
  • 1 teaspoon granulated sugar
  • ¼ teaspoon kosher salt (or to taste)
  • ¼ teaspoon black pepper (or to taste)

Instructions

  1. Prepare the vegetables: Place the sliced cucumbers, chopped Roma tomatoes, thinly sliced red onion, fresh basil, and chopped dill in a large bowl. Gently toss to combine all the salad ingredients evenly.
  2. Make the dressing: In a large measuring cup or small bowl, whisk together the extra virgin olive oil, apple cider vinegar, red wine vinegar, granulated sugar, kosher salt, and black pepper until the sugar dissolves and the dressing is well emulsified.
  3. Toss the salad with dressing: Drizzle the vinaigrette evenly over the salad mixture. Toss gently but thoroughly to coat all the vegetables with the dressing, ensuring an even distribution of flavors.

Notes

  • For a milder onion flavor, soak the sliced red onions in cold water for 10 minutes before adding them to the salad.
  • You can adjust the vinegar and sugar quantities to taste for a more tangy or sweeter dressing.
  • Chilling the salad for 15-30 minutes before serving enhances the flavors.
  • Use fresh herbs for the best taste; dried herbs will not provide the same fresh aroma and flavor.
  • This salad pairs wonderfully with grilled meats, fish, or as a light side for sandwiches.
