Ingredients

Wet Ingredients

  • ½ cup (5 ounces) peanut butter
  • ¼ cup (1.7 ounces) coconut oil
  • ½ cup (3 ounces) dark chocolate chips
  • heaping ⅛ cup (2 ounces) honey
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 2 cups (6.3 ounces) quick oats
  • 1 ½ tablespoons cocoa powder
  • ½ cup (2.5 ounces) ground flaxseed (golden flaxseed preferred)
  • 1 cup (1.2 ounces) crispy rice cereal (like Rice Krispies)
  • ⅓ cup (2.2 ounces) mini chocolate chips

Instructions

  1. Melting and Mixing Wet Ingredients: In a large microwaveable bowl, combine peanut butter, coconut oil, and dark chocolate chips. Microwave in 30-second intervals, stirring between each, until the chocolate chips are completely melted and the mixture is smooth. Stir in the honey and vanilla extract until well incorporated.
  2. Incorporating Dry Ingredients: Add the quick oats, cocoa powder, and ground flaxseed to the melted mixture and stir well to combine. Then gently fold in the crispy rice cereal and mini chocolate chips, being careful not to crush the cereal, until everything is evenly mixed.
  3. Chilling the Mixture: Place the mixture in the refrigerator for 30 minutes to firm up, making it easier to handle.
  4. Forming the Granola Bites: After chilling, remove the mixture and scoop out 1 ½ tablespoon portions. Gently roll each portion into a ball and place them onto a baking sheet lined with parchment or wax paper. Use a #40 cookie scoop for consistency. If the mixture is still too sticky, refrigerate it a little longer before shaping.
  5. Final Refrigeration and Storage: Refrigerate the formed granola bites on the baking sheet for an additional 30 minutes to 1 hour until firm. Then transfer them to a sealed container such as a large Tupperware or Ziploc bag. Store in the refrigerator for up to one week, or freeze for longer storage, up to a few months.

Notes

  • Use natural peanut butter for a healthier option without added sugars or oils.
  • Coconut oil helps bind the ingredients and adds a subtle coconut flavor; it can be substituted with melted butter if desired.
  • Dark chocolate chips add richness; choose high-quality chocolate for the best taste.
  • Ground flaxseed boosts fiber and omega-3 fatty acids, contributing to the nutritional profile.
  • Handle the cereal gently when mixing to maintain crunchiness.
  • The refrigeration steps are crucial to ensure the granola bites hold their shape.
