This Croissant French Toast Casserole is a decadent twist on the classic breakfast favorite, combining flaky croissants with a rich custard infused with cinnamon and vanilla, and studded with juicy mixed berries. Perfect for a cozy brunch or special occasion, it bakes to a golden, custardy perfection and serves 8 generously.

Ingredients

Bakery

  • 5-6 large croissants (fresh or a few days old)

Custard Mixture

  • 5 eggs
  • 1 cup whole milk (warm)
  • 1/2 cup heavy cream
  • 4 tbsp melted butter
  • 1/3 cup sugar
  • 2 tsp vanilla extract
  • 2 tsp ground cinnamon
  • 1/2 tsp fine sea salt

Fruits

  • 2 cups blueberries or mixed berries (plus more to garnish - strawberries, blueberries, blackberries, raspberries)

Instructions

  1. Prep the Oven and Dish: Preheat your oven to 350°F (175°C). Generously butter a 9" x 13" casserole baking dish to prevent sticking and add flavor.
  2. Prepare Croissants: Cut the croissants into small cubes about 1–1.5 inches each and place them evenly into the buttered baking dish, creating the base of your casserole.
  3. Make the Custard: In a mixing bowl, whisk together the eggs, warm whole milk, heavy cream, melted butter, sugar, vanilla extract, ground cinnamon, and sea salt until fully combined and smooth.
  4. Assemble the Casserole: Pour the custard mixture evenly over the croissant pieces in the dish. Use a spatula to gently press down the croissants so they absorb the custard well. Scatter 2 cups of blueberries or mixed berries on top and gently push some berries between the croissant layers. Let the casserole sit for at least 15 minutes to soak; for even better flavor and texture, refrigerate overnight.
  5. Bake Until Golden: Place the casserole in the preheated oven and bake for approximately 45 minutes, or until it is fully set and the top is golden brown. Remove from oven and serve warm, garnished with additional fresh berries if desired.

Notes

  • For best results, allow the casserole to soak overnight in the refrigerator before baking.
  • Use day-old croissants for better texture as fresh ones may become too soft.
  • You can substitute heavy cream with half-and-half for a lighter option.
  • Feel free to use any type of berries you prefer or a mix for varied flavor and color.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated gently.
