This Crockpot Creamy Garlic Chicken recipe is a comforting and flavorful slow-cooked dish featuring tender chicken breasts cooked in a rich garlic cream sauce. Perfect for an easy weeknight dinner, the chicken is cooked low and slow with garlic, cream cheese, parmesan, and cream of chicken soup, resulting in a luscious, creamy texture that's both hearty and delicious.

Ingredients

Chicken and Seasonings

  • 2 pounds boneless, skinless chicken breast (or chicken thighs)
  • ½ teaspoon ground black pepper
  • ¼ teaspoon garlic powder
  • ⅛ teaspoon salt

Sauce Ingredients

  • 10.5 ounce can cream of chicken soup (1 can)
  • 6 garlic cloves (minced or pressed)
  • 4 ounces cream cheese (softened)
  • ⅓ cup grated parmesan cheese
  • Freshly chopped parsley (for garnish)

Instructions

  1. Prepare the chicken: Add the chicken breasts to the bottom of the slow cooker. Season evenly with salt, black pepper, and garlic powder to infuse flavor into the meat.
  2. Add sauce base: Spoon the cream of chicken soup over the chicken, then spread the minced or pressed garlic evenly on top, ensuring the chicken is well coated for maximum flavor.
  3. Slow cook: Cover the slow cooker and cook on low for about 3 to 3½ hours, or until the chicken is fully cooked and tender.
  4. Make creamy sauce: Remove the cooked chicken from the crockpot carefully. Add the softened cream cheese and grated parmesan cheese to the remaining liquid in the pot and whisk thoroughly until the sauce is smooth and creamy.
  5. Combine and serve: Return the chicken back into the creamy sauce, coating it well. Garnish with freshly chopped parsley for a burst of color and fresh flavor. Serve warm.

Notes

  • For a thicker sauce, cook uncovered for the last 15-20 minutes to reduce excess liquid.
  • You can substitute chicken thighs for juicier meat with more flavor.
  • Serve with rice, mashed potatoes, or steamed vegetables for a complete meal.
  • Ensure cream cheese is softened before adding to avoid lumps in the sauce.
  • If fresh parsley is unavailable, dried parsley can be used but add during cooking rather than as garnish.
