These Crock-Pot Cocktail Sausages are a perfect party appetizer featuring smoky sausage bites simmered in a tangy-sweet sauce made from BBQ sauce, chili sauce, and apricot or peach jam. The sausages are first seared for a rich caramelized flavor, then slow-cooked to tender perfection, creating an irresistible dish that's easy to prepare and sure to please any crowd.

Ingredients

Sausages

  • 3 (14 ounce) packages fully-cooked smoked sausage (rope sausage)
  • 2 tablespoons avocado oil (or other neutral oil such as vegetable oil)

Sauce

  • 1 cup BBQ sauce
  • ½ cup chili sauce
  • ½ cup jam (apricot or peach)

Instructions

  1. Sear the Sausage: Heat the avocado oil in a large skillet over high heat. In batches, sauté the fully-cooked smoked sausage for 1-2 minutes until browned and caramelized on the outside. Transfer the sausages to a double layer of paper towels to blot away any excess grease.
  2. Prepare the Sauce in Slow Cooker: In the insert of a 4- to 6-quart slow cooker, combine the BBQ sauce, chili sauce, and apricot or peach jam. Whisk thoroughly until the sauce mixture is smooth and well combined.
  3. Combine and Cook: Add the seared sausage to the slow cooker insert with the sauce, stirring gently to coat all the sausages evenly. Cover and set the slow cooker to LOW heat and cook for 2 to 3 hours, or alternatively, cook on HIGH for 1 hour, until heated through and flavors have melded.
  4. Keep Warm and Serve: Switch the slow cooker to the WARM setting to keep the sausages hot for up to 3 to 4 hours. Arrange some cocktail picks nearby, allowing guests to serve themselves easily at your gathering or party.

Notes

  • You can use apricot or peach jam depending on your preference; both add a pleasant sweetness to balance the tangy BBQ and chili sauces.
  • If you prefer a spicier flavor, consider adding a splash of hot sauce or a pinch of cayenne pepper to the sauce mixture.
  • Make sure to brown the sausage well; this step adds depth of flavor and helps reduce grease in the final dish.
  • This recipe is ideal for parties, potlucks, or game day since it can be kept warm in the slow cooker for hours.
