Ingredients

Chicken and Filling

  • 1 ½ pounds boneless chicken breasts
  • 10.5 ounce can cream of chicken soup
  • 1 cup milk
  • ½ onion, chopped
  • 16 ounce bag frozen mixed vegetables
  • ½ cup chopped celery
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon pepper

Biscuit Topping

  • 16 ounce can Grands Biscuits

Instructions

  1. Prepare the Crock Pot: Spray the crock pot with non-stick spray to prevent sticking. Place the boneless chicken breasts evenly inside the crock pot base.
  2. Mix the Creamy Sauce: In a mixing bowl, whisk together the cream of chicken soup and milk until smooth to create a creamy sauce that will coat the chicken and vegetables.
  3. Add Vegetables and Seasonings: Stir in the chopped onion, frozen mixed vegetables, chopped celery, garlic powder, salt, and pepper into the soup and milk mixture. Pour this over the chicken breasts in the crock pot to evenly coat.
  4. Slow Cook the Chicken and Filling: Cover the crock pot with the lid and cook on low for 6-8 hours, or on high for 3-4 hours until the chicken is cooked through and tender.
  5. Shred and Combine: Once cooked, shred the chicken directly in the crock pot using two forks. Stir the shredded chicken into the creamy vegetable mixture to combine all the flavors.
  6. Bake the Biscuits: Meanwhile, bake the Grands Biscuits according to the package directions until golden brown and flaky, perfect for topping the pot pie filling.
  7. Serve: Spoon the creamy chicken and vegetable filling into bowls and serve with the warm baked biscuits on top or on the side. Enjoy this comforting pot pie meal!

Notes

  • Using frozen mixed vegetables makes this recipe quick and convenient; you can also substitute fresh vegetables if preferred.
  • The cooking time may vary slightly depending on your crock pot model and settings.
  • For added flavor, fresh herbs like thyme or parsley can be stirred in before serving.
  • You can substitute the biscuits with puff pastry or pie crust for a different texture.
  • Shredding the chicken in the crock pot ensures it absorbs more of the creamy sauce for maximum flavor.
