Ingredients

Hot Honey Sauce

  • 1/3 cup / 110g Honey
  • 1 1/2 tsp Hot Sauce (Frank's or Cholula preferred)
  • 3/4 tsp Chilli Flakes

Chicken and Coating

  • 2x 250g/9oz Chicken Breasts (horizontally sliced to create 4 pieces)
  • 2 tsp Paprika
  • 1 tsp Salt
  • 1/2 tsp Onion Powder
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Dried Oregano
  • 1/2 tsp Black Pepper
  • 1/4 tsp Cayenne Pepper
  • 35g / 1/4 cup Plain Flour
  • 2 Eggs, beaten
  • 65g / 1 cup Panko Breadcrumbs
  • Vegetable Oil, as needed (6-8 tbsp)

Topping

  • 200g / 7oz Feta, crumbled

Instructions

  1. Prepare Hot Honey Sauce: Combine honey, hot sauce, and chilli flakes in a microwave-safe bowl and warm for about 20 seconds. Stir and allow the mixture to cool. Alternatively, warm on the stove by bringing to a simmer then removing from heat. Adjust chilli flakes and hot sauce to desired heat level.
  2. Prepare Chicken and Seasoning: Slice the chicken breasts horizontally through the center to create four even-sized pieces. In a small bowl or pot, mix together paprika, salt, onion powder, garlic powder, dried oregano, cayenne pepper, and black pepper.
  3. Set Up Coating Stations: Arrange three shallow dishes and a large tray. Combine flour with half the seasoning mixture in the first dish. Place beaten eggs in the second dish. Mix panko breadcrumbs and remaining seasoning in the third dish. Dredge each piece of chicken thoroughly through flour, egg, and panko mixture, coating evenly, then place on the tray.
  4. Fry the Chicken: Heat enough vegetable oil in a large pan over medium-high heat to coat the base. When hot enough that a breadcrumb sizzles upon contact, carefully add the chicken pieces. Fry in batches if necessary, for 3-4 minutes per side until the coating is deep golden and crispy, and chicken is cooked through (white and piping hot inside). Transfer cooked chicken to a wire rack set over a tray to drain any excess oil.
  5. Add Feta and Grill: Sprinkle crumbled feta generously over the chicken pieces, covering as much surface as possible. Place under a preheated grill on high heat until the feta starts to turn golden and becomes buttery soft with a slightly crisp top.
  6. Serve: Drizzle the hot honey sauce over the feta-topped chicken to taste. Store leftover hot honey tightly in the refrigerator for future use. Enjoy immediately for the best texture and flavor.

Notes

  • Make sure the oil is hot enough before frying to ensure a crispy coating and to prevent the chicken from absorbing excess oil.
  • If working in batches when frying, replenish oil as needed to maintain proper frying levels and temperature.
  • Adjust the amount of chilli flakes and hot sauce in the hot honey according to your preferred spice tolerance.
  • Using a wire rack after frying helps keep the chicken crispy by preventing it from sitting in oil.
  • Serve with sides like a fresh salad or steamed vegetables to balance the richness of the dish.
