These Crispy Ground Beef Tacos are a delicious and easy weeknight meal that comes together in just 35 minutes. Featuring seasoned ground beef, melted cheese, and crunchy baked tortillas, they’re perfect for dipping in salsa, queso, or guacamole and sure to be a family favorite.

Ingredients

Meat Mixture

  • 1 pound lean ground beef (90% lean)
  • 1 packet taco seasoning
  • ¾ cup red enchilada sauce

Cheese

  • 2 ½ cups Oaxaca cheese, Mexican cheese, or Monterey Jack cheese, shredded

Tortillas & Oil

  • 10 corn tortillas
  • 1 tablespoon olive oil

Instructions

  1. Preheat Oven: Set your oven to 450°F (232°C) and allow it to fully heat while preparing the rest of the ingredients.
  2. Cook Beef Mixture: Heat a skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a spatula, until browned and no longer pink. Stir in the packet of taco seasoning and red enchilada sauce. Allow the mixture to simmer briefly, then remove from heat.
  3. Prepare Tortillas: Wrap the corn tortillas in a damp paper towel and microwave them for 30 to 60 seconds until they become flexible and pliable for folding.
  4. Assemble Tacos: Brush one side of each tortilla with olive oil. Place the tortillas oiled side down on a baking sheet. On half of each tortilla, add 2 tablespoons of shredded cheese, then top with about ¼ cup of the cooked beef mixture. Add 2 more tablespoons of cheese on top of the beef, then fold the tortilla over the filling to form a taco.
  5. Bake: Arrange the filled tacos in a single layer on the baking sheet. Bake in the preheated oven for 16 minutes or until the tortillas are crispy and the cheese is thoroughly melted.
  6. Cool & Serve: Let the tacos rest and cool for about 3 minutes before serving to allow them to set and avoid burns. Serve with your favorite salsa, queso, or guacamole for dipping.

Notes

  • Using lean ground beef helps reduce excess grease and makes tacos less oily.
  • Microwaving tortillas wrapped in a damp towel keeps them soft and easy to fold without cracking.
  • Oaxaca or Monterey Jack cheese melts well and adds a creamy texture inside the tacos.
  • Make sure to brush the tortilla with oil on the outside only to achieve a crispy baked finish.
  • These tacos can be customized with additional toppings like chopped cilantro, avocado slices, or sour cream if desired.
