This Crispy Baked Chicken Taquitos recipe delivers flavorful, crunchy Mexican-inspired snacks made with shredded seasoned chicken rolled in soft corn tortillas and baked to golden perfection. Perfect for a party appetizer or a tasty main dish, these taquitos are easy to assemble, low in fat thanks to baking instead of frying, and pair wonderfully with classic dips like guacamole, salsa, and sour cream.

Ingredients

Chicken Mixture

  • 2 cups shredded cooked chicken
  • 1 tsp chili powder
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp cumin
  • ¼ tsp salt

Other Ingredients

  • 16 small corn tortillas
  • Cooking spray (for spraying taquitos before baking)

Instructions

  1. Preheat Oven: Preheat your oven to 425 degrees F (220 degrees C). Line a baking sheet with a cooling rack or parchment paper and set aside to prepare for baking the taquitos.
  2. Mix Chicken and Spices: In a large bowl, combine the shredded cooked chicken with chili powder, garlic powder, onion powder, cumin, and salt. Stir thoroughly to evenly distribute the spices throughout the chicken.
  3. Heat and Soften Tortillas: Warm a non-stick skillet over medium heat. Cook each tortilla for 30 to 45 seconds on each side until heated through and pliable. Place the warmed tortillas in a zip-close plastic bag to steam and further soften, making them easier to roll without cracking.
  4. Assemble Taquitos: Lay each softened tortilla flat and place approximately 2 tablespoons of the seasoned chicken mixture in a line along one edge. Roll the tortilla tightly around the filling and place it seam-side down on the prepared baking sheet, leaving space between each rolled taquito.
  5. Spray and Bake: Lightly spritz all sides of the taquitos with cooking spray to help them crisp up in the oven. Bake for 18 minutes, then carefully flip each taquito and continue baking for an additional 5 minutes, or until they are browned and crisp.
  6. Serve: Remove the taquitos from the oven and serve immediately with your favorite dips like guacamole, salsa, and sour cream. Enjoy this crispy, flavorful Mexican-inspired treat!

Notes

  • For best results, use freshly cooked chicken or leftover roasted chicken shredded finely.
  • Softening the tortillas properly prevents cracking during rolling.
  • Using cooking spray instead of oil keeps the taquitos lighter and less greasy than frying.
  • You can customize spices to your liking, adding more chili powder for extra heat.
  • Serve immediately to enjoy the crisp texture; leftovers can be reheated in the oven to restore crispiness.
