Creamy Tuscan Chicken is a flavorful, comforting dish featuring tender seared chicken breasts simmered in a rich sauce made from heavy cream, parmesan cheese, garlic, sun-dried tomatoes, and fresh spinach. This easy one-pan meal comes together quickly and delivers a restaurant-quality taste perfect for a weeknight dinner or casual gathering.

Ingredients

Chicken

  • 4 (6-ounce) boneless skinless chicken breasts
  • 1 teaspoon Italian seasoning (or a mix of oregano, thyme, basil, and rosemary)
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 3 tablespoons extra virgin olive oil

Sauce

  • 4 garlic cloves, minced
  • ¼ cup finely chopped yellow onion
  • ½ cup sun-dried tomatoes, thinly sliced
  • 2 cups baby spinach
  • 1 ½ cups heavy cream
  • ¼ cup freshly grated parmesan cheese

Instructions

  1. Season chicken: Season both sides of each chicken breast evenly with Italian seasoning, kosher salt, and freshly ground black pepper to ensure flavorful meat.
  2. Sear chicken: Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the chicken breasts and sear them for 3 to 4 minutes on each side until they achieve a golden brown crust. Remove chicken from the skillet and set aside on a plate.
  3. Cook onions: Using the same skillet, add the remaining 1 tablespoon of olive oil and diced yellow onion. Sauté the onion for 2 to 3 minutes until softened and translucent.
  4. Cook tomatoes and garlic: Add the thinly sliced sun-dried tomatoes and minced garlic to the skillet with the onions. Continue to sauté for about 1 minute until fragrant and aromatic.
  5. Add spinach: Stir in the baby spinach and sauté for another minute until it begins to wilt but still retains its vibrant green color.
  6. Add cream and cheese: Pour in the heavy cream and sprinkle the freshly grated parmesan cheese into the skillet. Stir the mixture thoroughly while bringing it to a gentle simmer, allowing the sauce to thicken.
  7. Simmer with chicken: Return the seared chicken breasts to the skillet, nestling them into the creamy sauce. Allow everything to simmer together for about 5 minutes until the chicken is heated through and fully cooked.

Notes

  • For a dairy-free alternative, substitute the heavy cream with coconut cream and use a dairy-free parmesan-style cheese or nutritional yeast.
  • You can add crushed red pepper flakes for a subtle spicy kick.
  • Serve with pasta, rice, or crusty bread to soak up the delicious sauce.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated gently on the stovetop.
