Ingredients

Pasta

  • 16 oz rotini pasta

Sausage

  • 12 oz smoked sausage, sliced

Sauce

  • 3 tbsp salted butter
  • 2 tbsp flour
  • 4-7 cloves garlic, minced
  • 3 cups half and half
  • 1 cup chicken stock
  • 1 tsp salt
  • ½ tsp pepper
  • 1 tsp oregano
  • 1 cup shredded cheese (preferably mozzarella or cheddar)
  • 15 oz diced tomatoes, drained
  • ¼ cup shredded parmesan cheese

Instructions

  1. Cook the pasta: Bring a large pot of water to a boil. Once boiling, add the rotini pasta and cook according to the package directions until al dente. Drain the pasta and set aside.
  2. Brown the sausage: In a large skillet over medium heat, add the sliced smoked sausage. Cook until browned and slightly crispy on the edges. Remove the sausage from the skillet and set aside.
  3. Make the roux: Using the same skillet, melt the salted butter over medium heat. Gradually whisk in the flour and minced garlic until the mixture is smooth and fully incorporated, creating a roux.
  4. Add liquids: Slowly pour in the half and half while continuously whisking to prevent lumps. Then stir in the chicken stock. Continue to cook and whisk the sauce until it thickens slightly.
  5. Season the sauce: Add salt, pepper, and oregano to the sauce, stirring well to combine all the flavors.
  6. Melt the cheese: Add the shredded cheese to the sauce and stir until it has fully melted and the sauce is creamy.
  7. Combine all ingredients: Return the browned sausage to the skillet along with the cooked pasta and diced tomatoes. Toss everything together to coat the pasta and sausage evenly with the creamy sauce.
  8. Finish and serve: Sprinkle the shredded parmesan cheese on top of the pasta. Serve immediately and enjoy your creamy smoked sausage pasta.

Notes

  • For extra spice, add a pinch of red pepper flakes when seasoning the sauce.
  • Use any shredded cheese you prefer, like mozzarella or cheddar, for different flavor profiles.
  • Be sure to drain the diced tomatoes well to avoid making the sauce watery.
  • This dish reheats well and can be stored in the refrigerator for up to 3 days.
  • For a lighter option, substitute half and half with whole milk, but the sauce will be less creamy.
