Ingredients

Meat and Cheese

  • 1 pound ground turkey (or Italian sausage)
  • 1 package (20 ounces) fresh cheese ravioli
  • ½ cup parmesan cheese, grated (plus more for garnish)

Vegetables

  • 1 small yellow onion, diced
  • 1 large carrot, sliced into coins
  • 4 cloves garlic, minced
  • 6 cups fresh baby spinach

Liquids and Fats

  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups chicken broth
  • 2 cups half and half (or heavy cream)

Spices and Seasonings

  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and fresh ground black pepper, to taste

Instructions

  1. Saute the Aromatics and Meat: Heat olive oil and butter in a large stock pot or Dutch oven over medium heat. Add diced onions and sliced carrots; cook for about 3 minutes until softened. Add the ground turkey and cook until browned and no longer pink.
  2. Add Garlic and Herbs: Drain any excess grease if necessary. Stir in minced garlic, dried basil, and dried oregano. Cook for 2 minutes until fragrant.
  3. Simmer the Soup Base: Pour in the crushed tomatoes and chicken broth. Increase heat to bring the mixture to a boil.
  4. Cook the Ravioli: Stir in the fresh cheese ravioli. Cook for approximately 6 minutes or until the ravioli are tender but still hold their shape.
  5. Incorporate Spinach and Cream: Add the fresh baby spinach and cook for 2 minutes, until wilted. Slowly stir in the half and half or heavy cream to create a creamy consistency.
  6. Finish with Parmesan and Seasoning: Reduce heat to a simmer. Stir in grated Parmesan cheese until melted. Taste and adjust salt and pepper as desired.
  7. Serve: Ladle the soup into bowls and garnish with additional Parmesan cheese if desired. Serve hot.

Notes

  • Italian sausage can be substituted for ground turkey for a richer flavor.
  • Fresh cheese ravioli can be found in the refrigerated section of most grocery stores.
  • Adjust cream quantity for desired soup richness; half and half will be lighter than heavy cream.
  • For a vegetarian version, substitute ground turkey with plant-based crumbles and use vegetable broth instead of chicken broth.
  • This soup can be stored in the refrigerator for up to 3 days; reheat gently to avoid overcooking ravioli.
