Cowboy Soup is a hearty and flavorful one-pot meal featuring lean ground beef, pinto beans, vegetables, and a blend of spices simmered together to create a rich, comforting stew perfect for family dinners or gatherings.

Ingredients

Main Ingredients

  • 1 1/2 pounds lean ground beef
  • 1 medium onion, chopped
  • 2 large carrots, diced
  • 3 garlic cloves, minced
  • 4 cups beef broth
  • 15 ounce can pinto beans, drained
  • 28 ounce can diced tomatoes with juice
  • 1 cup Heinz chili sauce (NOT sweet chili sauce)
  • 3 medium russet potatoes, peeled and chopped
  • 1 cup frozen corn
  • 1 1/2 cups frozen green beans

Spices

  • 3 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 1/2 teaspoons salt
  • 1 teaspoon black pepper
  • 1/2 teaspoon smoked paprika

Instructions

  1. Brown the beef and sauté aromatics. In a large pot or Dutch oven, brown the lean ground beef over medium heat. Break the meat into crumbles to cook evenly. Once browned, add the chopped onion and minced garlic to the pot and cook until onions are translucent and garlic is fragrant.
  2. Add remaining ingredients. Stir in the carrots, potatoes, beef broth, pinto beans, diced tomatoes with juice, Heinz chili sauce, frozen corn, frozen green beans, chili powder, ground cumin, salt, black pepper, and smoked paprika. Mix well to combine all ingredients thoroughly.
  3. Bring to a boil. Increase the heat to medium-high and bring the soup to a low boil. This will help meld all the flavors together.
  4. Simmer the soup. Reduce heat to low and allow the soup to simmer gently for 20 to 30 minutes. This slow simmer ensures the vegetables soften and the flavors fully develop.
  5. Serve and garnish. Ladle the soup into bowls and garnish as desired with fresh cilantro, green onions, sour cream, or crushed tortilla chips for added texture and flavor.

Notes

  • You can adjust the chili powder and smoked paprika to change the heat level to your preference.
  • For a thicker soup, simmer uncovered for a longer time or mash a few potatoes into the soup.
  • Ground turkey or chicken can be substituted for the ground beef for a leaner option.
  • This soup stores well in the refrigerator for up to 4 days and also freezes nicely.
  • Optional toppings like avocado or shredded cheese can be added to suit your taste.
