A quick and easy recipe for homemade cottage cheese wraps that are perfect for a low-carb, high-protein meal. These wraps are soft, cheesy, and versatile, making them great for breakfast, lunch, or dinner options. Made with cottage cheese, eggs, mozzarella, and almond flour, they provide a gluten-free and delicious alternative to traditional wraps.

Ingredients

Wrap Ingredients

  • 1 cup Cottage cheese
  • 2 large Eggs
  • 2 large Egg whites
  • 1 cup Mozzarella cheese (shredded)
  • 1/4 cup Wholesome Yum Blanched Almond Flour (for texture)
  • 1/2 tsp Italian seasoning (optional)
  • 1/4 tsp Garlic powder (optional)

Instructions

  1. Preheat Oven: Preheat the oven to 400 degrees Fahrenheit (204 degrees Celsius) and line a large baking sheet with parchment paper to prevent sticking and make cleanup easier.
  2. Prepare Batter: In a blender or food processor, combine the cottage cheese, eggs, egg whites, shredded mozzarella cheese, almond flour, and optional seasonings like Italian seasoning and garlic powder. Blend everything until smooth to create a uniform batter.
  3. Spread Batter: Pour the batter onto the lined baking sheet and spread evenly to approximately 1/8 inch thickness, extending the batter to the edges for an even cook and consistent wrap size.
  4. Bake: Place the baking sheet in the preheated oven and bake the wraps for 8 to 10 minutes until they are semi-firm. For a crispier and more golden wrap, bake up to 15 minutes.
  5. Cool and Cut: Remove the wraps from the oven and allow them to cool for at least 15 minutes on the parchment paper. Then slide the parchment paper onto a cutting board and cut the sheet into 4 rectangular pieces.
  6. Fill and Roll: Add your favorite fillings to one end of each rectangular wrap, then roll them up tightly to enclose the fillings. Serve immediately or store wrapped for later use.

Notes

  • Make sure to spread the batter thinly and evenly for best results; too thick will prevent proper cooking.
  • These wraps work well with a variety of fillings such as vegetables, deli meats, or spreads.
  • Allowing the wraps to cool fully is essential to prevent tearing when rolling.
  • Almond flour provides texture and helps bind the wraps, but you can experiment with other gluten-free flours.
  • Optional seasonings like Italian seasoning and garlic powder add flavor but can be omitted or substituted to suit taste preferences.
  • Store wraps wrapped tightly in the refrigerator for up to 3 days or freeze for longer storage.
