A quick and nutritious Cottage Cheese and Avocado Toast recipe perfect for a healthy breakfast or snack. Creamy mashed avocado is blended with full-fat cottage cheese and fresh chives, then spread over toasted buttered or oiled bread, topped with a sprinkle of red pepper flakes and garnished with microgreens for a flavorful and satisfying meal ready in just 6 minutes.

Ingredients

Bread

  • 3 slices bread (sourdough, rye, wholegrain etc)

Cottage Cheese Avocado Mixture

  • ⅔ cup + 1 tablespoon full-fat cottage cheese
  • 4.94 ounces avocado flesh (approximately 1 large avocado)
  • 2 tablespoons finely chopped chives
  • ¼ teaspoon fine sea salt
  • Pepper to taste

Toppings and Garnish

  • ⅓ teaspoon red pepper flakes
  • Microgreens or alfalfa for garnish
  • 2 teaspoons butter or extra virgin olive oil (optional, for toasting bread)

Instructions

  1. Mash avocado: Place the avocado flesh in a shallow bowl and mash roughly using a fork. The texture doesn’t have to be perfectly smooth; some chunkiness adds to the mouthfeel.
  2. Add cottage cheese and seasonings: Add the cottage cheese, chopped chives, fine sea salt, and pepper to the mashed avocado. Gently stir until all ingredients are thoroughly combined. Taste and adjust the seasoning as needed. Set the mixture aside.
  3. Toast bread: Lightly butter the bread slices on both sides including the edges, or brush with a little extra virgin olive oil if preferred. Toast the bread in a non-stick pan over medium heat for a few minutes until the buttered side is lightly browned. Flip the slices and toast the other side for an additional 1–2 minutes. Remove the bread from the heat and let it cool slightly so it's easy to handle. Alternatively, the bread can be toasted in a regular toaster with optional butter or oil.
  4. Assemble and garnish: Evenly spread the cottage cheese and avocado mixture over the toasted bread slices. Sprinkle a pinch of red pepper flakes over each slice for a gentle spicy kick. Finish by garnishing with fresh microgreens or alfalfa. Serve immediately and enjoy your vibrant and wholesome toast.

Notes

  • You can use any type of bread you prefer: sourdough, rye, wholegrain, or others.
  • Full-fat cottage cheese gives the best creamy texture and flavor, but you can use low-fat if desired.
  • Adjust the amount of red pepper flakes to your preferred spice level or omit if sensitive to heat.
  • Microgreens can be substituted with sprouts or fresh herbs like parsley or cilantro.
  • Using butter or olive oil enhances the toasty flavor, but you can skip it for a lighter option.
  • Consume immediately after assembling to enjoy the fresh textures.
