Ingredients

Base and Meat Mixture

  • 8 6-inch tortillas
  • 1/2 lb. Ground Beef (80 or 85%)
  • 1/4 cup old-fashioned oats
  • ½ teaspoon garlic salt
  • ½ teaspoon onion powder
  • 1 ½ teaspoon chili powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon cocoa powder
  • 1/4 cup water
  • 1 Tablespoon cornstarch

Refried Beans and Toppings

  • 3/4 cup refried beans
  • 1 large tomato (diced)

Enchilada Sauce

  • 1/2 cup enchilada sauce
  • ½ teaspoon sugar
  • ½ teaspoon onion powder
  • 1 teaspoon juice from diced green chilies

Cheese Blend

  • 1/2 cup Cheddar (grated)
  • 1/2 cup Mozzarella (grated)
  • 1/2 cup Monterey Jack (grated)

Instructions

  1. Preheat the Oven: Preheat your oven to 350 degrees Fahrenheit to prepare for baking the Mexican pizzas.
  2. Brown the Ground Beef: In a pan over medium heat, brown the ground beef thoroughly. Once cooked, drain any excess grease for a leaner result.
  3. Season the Beef Mixture: Add the oats alongside garlic salt, onion powder, chili powder, smoked paprika, and cocoa powder to the browned beef. Stir these seasonings in well.
  4. Simmer and Thicken: Pour in the water and continue heating the mixture until the water reduces by half, roughly 5 minutes. Then, add the cornstarch and cook for another 3-4 minutes until the mixture thickens.
  5. Set the Meat Mixture Aside: Remove the pan from heat and set the beef mixture aside to cool slightly while assembling the pizzas.
  6. Layer the Tortillas and Beans: Spread the refried beans evenly over four of the tortillas. Then, spread the cooked beef mixture on top of the beans. Cover each with one of the remaining tortillas, creating a layered base.
  7. Prepare the Enchilada Sauce: Combine the enchilada sauce, sugar, onion powder, and green chili juice in a bowl and mix well.
  8. Assemble the Mexican Pizzas: Spread the prepared enchilada sauce mixture over the top tortilla of each layered pizza. Next, evenly distribute the diced tomatoes on top.
  9. Add the Cheese Blend: Sprinkle a blend of grated Cheddar, Mozzarella, and Monterey Jack cheeses evenly over the tomatoes on each pizza.
  10. Bake: Place the assembled pizzas on a baking sheet and bake in the preheated oven for 10-15 minutes, or until the cheese is fully melted and bubbly.
  11. Serve: Remove from the oven and enjoy your homemade Copycat Taco Bell Mexican Pizzas warm.

Notes

  • Use refried beans with or without added seasoning depending on your preference.
  • Old-fashioned oats act as a binder in the beef mixture and add texture; quick oats can be substituted if needed.
  • The cocoa powder in the beef mixture adds depth of flavor without tasting like chocolate.
  • You can substitute the 3-cheese blend with any similar combination of shredded cheeses.
  • To make the pizzas crispier, you can place them on a wire rack while baking to allow airflow underneath.
