Ingredients

Cookie Dough

  • 2 sticks Unsalted Butter (227g), room temperature
  • 3/4 cup Granulated Sugar (150g)
  • 3/4 cup Light Brown Sugar (165g)
  • 2 cups All-purpose Flour (250g)
  • 1 tsp Salt
  • 1 tsp Vanilla Extract
  • 1/3 cup Whole Milk (80g / 80ml)
  • 2/3 cup Mini Chocolate Chips (120g)

Chocolate Coating

  • 7 oz Chocolate (200g), Milk or Dark

Instructions

  1. Beat Butter and Sugars: In a large bowl, beat the room temperature unsalted butter with granulated sugar and light brown sugar until the mixture becomes light and fluffy, creating a creamy base for the cookie dough.
  2. Add Vanilla: Mix in the vanilla extract thoroughly to infuse the dough with its sweet, aromatic flavor.
  3. Incorporate Flour and Salt: Gradually add all-purpose flour and salt to the mixture, stirring until a cohesive dough forms, signaling the dough base is ready.
  4. Adjust Texture with Milk: Slowly add whole milk in increments, mixing well after each addition. For soft, gooey cookie dough, add all the milk; for a firmer dough, add less to reach desired consistency.
  5. Mix in Chocolate Chips: Stir in mini chocolate chips evenly throughout the dough to distribute bursts of chocolate in every bite.
  6. Form Dough Balls: Using a heaped teaspoon, scoop out cookie dough portions and roll them into balls with your hands. Continue until all dough is shaped.
  7. Chill Dough Balls: Place the formed cookie dough balls in the refrigerator to firm up while preparing the chocolate coating.
  8. Melt and Temper Chocolate: For best results, temper the chocolate either by following a tempering guide or melting it carefully in 30-second increments in the microwave until smooth and ready for dipping.
  9. Coat Cookie Dough Balls: Dip each chilled cookie dough ball into the melted chocolate, ensuring full coverage. Use a fork to lift and let excess chocolate drip off, then transfer to a lined baking sheet.
  10. Set Chocolate: Allow the chocolate coating to set completely at room temperature or speed up the process by placing the cookie dough bites in the refrigerator before serving.

Notes

  • Tempering the chocolate ensures a shiny, crisp coating that sets well; if skipping tempering, the chocolate may not be as firm or glossy.
  • Adjust the amount of milk depending on your preferred cookie dough consistency—from soft and gooey to firmer bites.
  • Store finished bites in an airtight container in the refrigerator for up to one week.
  • Use high-quality chocolate for best flavor in the coating.
  • These bites are safe to eat raw because the flour can be heat-treated prior to use to avoid any risk.
