Cloud Eggs are a whimsical, airy twist on traditional eggs, featuring softly whipped egg whites baked to light, fluffy peaks with a cheesy center. This recipe yields delicate egg white nests topped with creamy yolks, perfect for a stylish breakfast or brunch that's both simple and impressive.

Ingredients

Ingredients

  • 2 large eggs
  • 2 small pinches salt (a pinch per egg)
  • 1/4 cup grated cheese (Gruyere, Swiss, or Parmesan)

Instructions

  1. Preheat the oven: Preheat your oven to 450°F (230°C) and position a rack in the middle. Line a roasting pan or a baking sheet suitable for high temperatures with parchment paper or a Silpat mat to prepare for baking.
  2. Separate the eggs: Carefully separate the egg yolks from the whites, ensuring no yolk contaminates the whites for optimal whipping. If making multiple eggs, keep each yolk in a separate small bowl for later use.
  3. Beat the egg whites: In a very clean mixing bowl, add the egg whites and a small pinch of salt to each. Using a hand mixer or stand mixer with a whisk attachment, beat the whites starting at low speed, gradually increasing to high until stiff peaks form, meaning the whites hold their shape firmly.
  4. Fold in the cheese: Gently fold the grated cheese into the whipped egg whites with a spatula, taking care not to deflate the volume you've created.
  5. Form the egg nests: Spoon and mound the cheese-folded egg white mixture onto the prepared baking sheet, shaping two nests with indentations in the center to hold the yolks later.
  6. Bake the whites: Place the baking sheet in the preheated oven for 3 minutes to set the egg whites slightly.
  7. Add the yolks and finish baking: Carefully remove the rack, add one egg yolk into the center of each egg white nest, then return the baking sheet to the oven and bake for an additional 3 minutes, until the yolks are just set but still creamy.
  8. Serve immediately: Once done, serve the cloud eggs hot to enjoy their fluffy texture and cheesy richness at their best.

Notes

  • Use very fresh eggs for the best whipping and texture.
  • Ensure the mixing bowl and whisk are completely clean and free of grease to achieve stiff egg whites.
  • Grated cheese can be varied based on preference, but harder, flavorful cheeses like Gruyere, Swiss, or Parmesan yield the best results.
  • Serve immediately as cloud eggs are best enjoyed fresh and may deflate if left to stand.
  • For extra flavor, sprinkle with cracked black pepper or fresh herbs before serving.
