Classic French Crepes are thin, delicate pancakes perfect for sweet or savory fillings. This easy recipe yields tender crepes with a smooth batter, made with simple ingredients like milk, eggs, flour, and butter. Resting the batter ensures a silky texture, and cooking them on a non-stick pan produces soft, slightly crisp edges. Serve with lemon and sugar, whipped cream, or your favorite toppings for a delightful breakfast or dessert.

Ingredients

Batter

  • 1 ¼ cups milk (10 fl oz)
  • 3 large eggs
  • 2 tbsp oil or melted butter
  • 2 tsp sugar (for savory crepes) OR 3 tbsp sugar (for sweet dessert crepes)
  • ½ tsp kosher salt
  • 4 oz all-purpose flour (scant 1 cup)
  • 2 tbsp softened butter (or oil, more as needed for cooking)

Serving (Lemon and Sugar Crepes)

  • 1 - 2 lemons (sliced thick or cut into wedges)
  • ¼ cup vanilla sugar
  • Whipped cream (optional)

Instructions

  1. Mix the wet ingredients: Place the milk and eggs in a jug or bowl. Whisk together until combined, yielding about 2 cups of liquid. Add the oil or melted butter and whisk again to incorporate.
  2. Combine dry ingredients: In a large bowl, sift together flour, salt, and sugar.
  3. Create the batter paste: Add about ¾ to 1 cup of the liquid mixture to the dry ingredients, gently mixing to form a smooth paste. Avoid over-mixing to keep the batter light.
  4. Add remaining liquid: Pour in the rest of the liquid gradually and mix until the batter is smooth and watery, perfect for spreading thinly.
  5. Let batter rest: Cover the batter and allow it to rest for at least 20 to 30 minutes at room temperature. Alternatively, you can refrigerate it overnight or up to two days to improve texture and flavor.
  6. Blend alternative: For quick blending, add all ingredients into a blender with flour last, blending briefly until smooth. Then let rest as above.
  7. Prepare pan: Preheat a 10-inch non-stick pan over medium heat. Brush with a thin layer of softened butter or oil using a silicone brush or butter-soaked cloth to prevent sticking.
  8. Cook the crepes: Before each crepe, mix the batter to ensure uniform consistency. Pour ¼ cup of batter into the hot pan, swirling quickly to coat the bottom evenly. Cook until just set at the surface (approximately 30 seconds) for extra soft crepes, or until edges brown slightly (around 40 seconds) for classic crepes.
  9. Flip and finish cooking: Gently flip the crepe and cook for another 10 to 15 seconds to develop light caramelized spots. Remove and place on a plate or wire rack. Repeat with remaining batter, mixing each time before pouring.
  10. Serve warm: Stack the cooked crepes and cover with a plate. If not serving immediately, warm in the microwave for about 30 seconds, removing the top plate quickly to prevent sogginess.
  11. Lemon and sugar serving suggestion: Place one crepe on a plate, sprinkle about 1 teaspoon of sugar on half, fold in half, then fold again into quarters. Repeat with all crepes.
  12. Garnish and enjoy: Serve the folded crepes with thick lemon slices for squeezing and a dollop of whipped cream if desired.

Notes

  • The batter can be prepared using a whisk or blender depending on preference and convenience.
  • Resting the batter allows the flour to hydrate and gluten to relax, resulting in more tender crepes.
  • Butter the pan lightly before cooking each crepe to avoid sticking without excess greasiness.
  • Cooking time varies for softer or classic-style crepes; adjust according to personal texture preference.
  • Crepes can be served with a wide range of fillings, sweet or savory.
  • Use all-purpose flour for best texture; variations in flour type may affect consistency.
