Ingredients

Pancakes

  • 5 oz all purpose flour (1 cup, if measuring)
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup milk
  • 1 tbsp butter (melted)
  • 1 egg

Cinnamon Swirl Filling

  • 3 tbsp butter (melted)
  • 1/2 cup brown sugar
  • 2 tsp ground cinnamon

Cream Cheese Glaze

  • 3 tbsp butter
  • 2 oz cream cheese
  • 3/4 cup powdered sugar
  • 1/2 tsp vanilla extract

Instructions

  1. Mix Dry Ingredients: Whisk together the flour, baking powder, and salt in a medium bowl to evenly distribute the leavening and seasoning.
  2. Combine Wet Ingredients: In a separate bowl, whisk the milk, melted butter, and egg until fully blended.
  3. Make Batter: Pour the wet ingredients into the dry and stir gently until the flour disappears but the batter still has some lumps, avoiding overmixing for tender pancakes.
  4. Prepare Filling: In a small bowl, stir together the melted butter, brown sugar, and ground cinnamon to create the cinnamon swirl filling.
  5. Make Glaze: Melt the butter and cream cheese together in the microwave, then stir in powdered sugar and vanilla extract until smooth and creamy.
  6. Heat Griddle: Preheat a griddle or non-stick skillet over medium heat and lightly grease with butter if desired to prevent sticking.
  7. Cook Pancakes: Using a 1/4 cup measure, pour batter onto the griddle. Immediately spoon about a tablespoon of the cinnamon swirl filling in a circular outward motion on top of each pancake to create the swirl effect.
  8. Flip Pancakes: Cook the pancakes for about 1 minute until bubbles form on the surface, then flip and cook for another 1 to 2 minutes until golden brown and cooked through.
  9. Serve: Stack the pancakes and generously drizzle the cream cheese glaze over the top. Serve warm and enjoy the blend of cinnamon roll flavors in pancake form.

Notes

  • For fluffier pancakes, make sure not to overmix the batter; some lumps are okay.
  • If you prefer a stronger cinnamon flavor, add a little extra cinnamon to the filling.
  • The glaze can be made ahead and stored in the refrigerator; reheat slightly before serving.
  • Use a non-stick griddle or skillet for easier flipping and less sticking.
  • Adjust cooking time slightly depending on your stove and griddle temperature to avoid burning or undercooking.
